Grill grates are horrible. Because grill marks are a lost opportunity. You want an all over sear. I spin the grate every minute so that the radiant heat from the coals are searing the meat, not the grates. That way you get an all over crust.
It's common to wear black latex gloves when handling raw meat. I think some of it is for visual contrast. As a more practical matter, some of us have a lot of hair on the backs of our hands and don't want that winding up on the food.
