Best Side Dish, Green beans French Style

- Green beans are one of the best side vegetable dishes you can make. They go with almost everything, from lamb racks, roast beef or chicken, even with fish. This method is the French way, which keeps the beans nice and green. You can pre-cook them in advance, even the day before and finish them off just before serving.
The beans are cooked with sliced shallots, this enhances the flavour without overpowering the actual meal. There’s no garlic, chili, nuts etc. It is a side dish after all, not a meal, therefore simplicity is best.
If you’re in a hurry, skip the cooling down part and add directly to pan once cooked. They won’t be as green but still as delicious.
You could also add a little lemon squeeze if you like. Enjoy green beans French style.

I made your exact recipe tonight for dinner. It was tasty. However, I didn't use shallots I just sautéed some yellow onions along with all your other techniques (cold water bath, return the beans to hot water, etc.) and it was vividly green and crisp, yet tender, flavorful and not oily at all. Also it was so quick to make. Will be doing this again. Thanks!

I love cooking green beans this way I also add garlic and julienned sun dried tomatoes. Your beans are from your garden I presume, beautiful Joel. As a French I must admit we usually use shallots with peas rather Than green beans (we préfèr them with parsley and garlic, especially in south of France) but indeed shallot and butter go very very well with green beans too

Geri is it best to use salted or unsalted butter? Is there any difference at all?
@@mariodacosta3317 I believe it’s personal taste. The body needs salt particularly for digestion. For the water, kosher is great-it’s larger particles and would be hard to eat. Since salt was added to the dish, and it looked a lot like Himalayan salt, unsalted butter would likely be best for the cook on the beans. Personally, i use salted and just cut back on salting the final dish. Lots of pepper though!
@@PineGeri Thanks. I've always wanted to find out myself but even buying small packs of salted & unsalted butter is too much when I'm only cooking for 2. Or if I try salted on a dish & unsalted the next time I cook the same dish, it will be too far apart to compare as we both don't like eating 2 same dishes in a week. Also on all cooking clips they just say "use butter" without indicating which one.
That's a hand molded grass fed butter from Brittany, to me it's gold standard of butters when I can find it.
@@recipe30 but the name? I will do whatever is necessary to get the best butter. Butter is the best while most oils arrive already in a rancid state.

Great upload. I now buy shallots (and planted some from seed under the grow lights... Zebrune ), better quality butter at the grocery store (ok, not $32 for 8.8 oz of Paysan Breton from Amazon... but I am sure it is wonderful)... garlic I grow... have an indoor bay leaf plant... lots of fresh herbs...own chickens for eggs...our zone 5 can't do lemon trees (how cool is that, though?!) ... thanks for helping us be better cooks!
