However, I didn't use shallots I just sautéed some yellow onions along with all your other techniques (cold water bath, return the beans to hot water, etc.) and it was vividly green and crisp, yet tender, flavorful and not oily at all. Your videos are always so beautiful to watch. As a French I must admit we usually use shallots with peas rather Than green beans (we préfèr them with parsley and garlic, especially in south of France) but indeed shallot and butter go very very well with green beans too

I really love green beans, sometimes eat them raw. But this is quite simple, well it looks that way...my daughter hates veggies, but I'll try making it for the holidays....merci chef

@@mariodacosta3317 I believe it’s personal taste. The body needs salt particularly for digestion. For the water, kosher is great-it’s larger particles and would be hard to eat. Since salt was added to the dish, and it looked a lot like Himalayan salt, unsalted butter would likely be best for the cook on the beans. Personally, i use salted and just cut back on salting the final dish. Lots of pepper though!

Or if I try salted on a dish & unsalted the next time I cook the same dish, it will be too far apart to compare as we both don't like eating 2 same dishes in a week. Also on all cooking clips they just say "use butter" without indicating which one.

Great upload. I now buy shallots (and planted some from seed under the grow lights... Zebrune ), better quality butter at the grocery store (ok, not $32 for 8.8 oz of Paysan Breton from Amazon... but I am sure it is wonderful)... garlic I grow... have an indoor bay leaf plant... lots of fresh herbs...own chickens for eggs...our zone 5 can't do lemon trees (how cool is that, though?!) ... thanks for helping us be better cooks!

That's a hand molded grass fed butter from Brittany, to me it's gold standard of butters when I can find it.
@@recipe30 but the name? I will do whatever is necessary to get the best butter. Butter is the best while most oils arrive already in a rancid state.

Green beans needs some Note salt. İn The movie, The beans come to cold water, then back in the pot with hot water. So the most salty washed out.
The salt water helps keep them green but they don't absorb that much salt. They need a top up, plus crystal salt tastes great on beans. 🎄
