In my opinion, the best way to do "free range" villagers, is to make a secure, enclosed, well-lit village, and then let them roam free. And for villagers that are especially important, you keep them enclosed in another building in the town just to be sure. Maybe consider them to be extreme introverts if it makes you feel better...

Helpful hint for horses, dig a small perimeter around an area and plant sweet berry bushes in it and cover them in carpet and the horses won't wander off

Fwip you should burn the seeds and other blocks you don't want in the moss farm so it can hold more or if you like it mossy (made a joke) then do what you want just a idea
