I was making infusions in Russia for about 10 years and now I'm start making it in Argentina. I'm usually made strawberry-chili infusion, taking 1 kg of strawberry and 2 litres of prepared alcohol (1 part of ethyl alcohol and 1 part of water, so it would be around 52-54% alcohol, cause it's better for the maceration than 96% alcohol if you work with fruits or berries). And after cutting the strawberry just mix it with alcohol and leave it for 2 days. Then just filter it with vacuum filtration and balance with mix of acids and sugar syrup.
It looks great! Can I do it without the pectinex, ascorbic acid and vitamin C? Only blend 1200g strawberry and 100g sugar with a blender and freeze in the refrigerator. Next, follow the steps in the video to get 600 of concentrated strawberry juice. Next, add 204ml of 96% vodka to the 600 of concentrated strawberry juice to get 804ml strawberry liqueur. I've done a strawberry liqueur for my cocktails for many menus now. I usually infuse the high proof alchohol and then after removing the solids will then make a proofing agent from them to bring it down to a drinkable abv. I also tend to incorporate ginger root and basil into mine and use it in a last word style cocktail.

My favorite strawberry liqueur recipe has a bit of fennel and coriander there to highlight the strawberry. I wonder if cryo-concentrarion would do the same with only strawberries 🤔
Hey @KevinKos I didn't get one step. What do you use as concentrated juice, the first stuff that melts? Or what remains frozen after you removed half the weight by melting? In the pineapple video you talked about directional freezing, but I didn't understand if you are using that technique here too
Really like your liqueur recipes, but high proof grain alcohol is illegal where I live in the US. Highest I can get is 60% ABV. Would I add more alcohol in this case to bring it to the same ABV? Would that effect the overall flavor?
How does the freeze concentration work? I proceed with what thaws first and discard the still frozen part? I'd assume what melts slower is more concentrated
Could we see a homemade liqueur of cherries by any chance? Given that cherries can be both tart or sweet, two types of liqueur could be made and used for different cocktails.

Yes, you can do it without. I am not 100% sure about the clarity of the drink, but the liqueur should still be good.

yes and not always. I blended it together with strawberries so blender added aditional heat so the pectinex started working faster.
In France they don't sell alcohol over 40%, what can we do to use your method ?
