Hey Kevin! I have had a spectacular inverted espresso martini riff in the KAA Mixology bar in Budapest called “Sip Happens” (to give credit where credit is due). It was a clarified meczal milk punch but the coffe element was only on top of it, in the form of a coffe-raspberry foam, delicius! How would you go about making this cocktail? There has to be some kind of acidity, like lime juicy in the milk punch clarification process right?
It sounds delicious! I did something similar with an inverted White Russian cocktail or inverted Dominicana. Indeed, in the milk punch process, there has to be something acidic so the curdling process starts.
Saline solution, or just salt with a little water, does the same in the cocktail as it does it cooking - it makes the flavors pop out a little bit more.

What’s the ABV of the resulting coffee infused Vodka? Since the freezing points of vodka (-23°C) and oil (-17°C) are quite similar it must go up a lot? Would it make sense to use a higher ABV spirit to extract more from the oil or not? ☕️
That would be easier and faster, you're right! But it would add a lot of color to the vodka so it then starts looking more like the classic Espresso Martini! Not that there's anything wrong with that 😉
I guess Greg from HTTD will have to address this sooner or later, he had issues with a clear Espresso Martini years ago☕ BTW, due to this week's newsletter I'm obliged to share a very interesting series of young adult male catered comic-books from Japan called "Bartender". The first volume's chapters make clear that the author & artist knew what they were doing when making this serialized story. I'll keep it at that, and it's also a commentary similar to the way expressed in the newsletter, but enough spoilers.
It's a cool technique, but I really don't love the oil soluble flavors in coffee... I'd much rather milk wash a pour over. The added whey would also help with foaming.

I thing there is noo need to use higher proof spirit but as you mentioned, you will extract more with using it.

I think i gonna try this at home. But i only have one question. U use 400 ml of Vodka and the oíl cofee, how much u get from this blend?
When fatwashing, you don't really lose much. Maybe you end up with 350 mL, but I don't remember the exact volume.
