HONEYED NUT AND PHYLLO PIE
Serves 8
4 cups raw walnuts, pistachios, sliced almonds, and/or pine nuts (1 lb / 454g)
¾ teaspoon ground cardamom
½ teaspoon Diamond Crystal kosher salt
⅓ cup plus 2 tablespoons honey (5.5 oz / 155g)
16 tablespoons unsalted butter (8 oz / 226g), melted, divided
2 tablespoons fresh lemon juice, divided
12 sheets frozen phyllo dough measuring 18 × 13 inches (10.7 oz / 303g), thawed in the refrigerator
¾ cup demerara sugar (5.3 oz / 150g), divided
½ teaspoon orange blossom water

I will have to try this. Baklava is a staple in my family, with my mom being Lebanese and her father having been a chef, I use the old family recipe, but I switch out walnuts for pistachios. This method looks like an interesting wrinkle to try. I like the fluffy top layers and by scrunching them up like you did it will be even flakier.

I just bought some Kerrygold butter that was $10/pound, on sale! But I made buttercream frosting with it, and it was delicious! I wouldn't splurge for baked potatoes with other flavors like bacon and chives, but the butter is the main flavor in buttercream frosting, besides a little vanilla. Claire is correct; when the butter really matters, Kerrygold is great. Not a sponsored comment. :)

I make something very similar but instead of nuts I use mandolin thin apple slices. And instead of a big tart I cut the slab into 4" x 4" slices and then kind of fold the corners up and fit them into a cupcake tray. They end up looking kind of like apple and caramel flavoured roses.
Have you ever made Galaktoboureko? It's this dish, but with a custard filling instead of nuts. It's very good.

I love the combination of cardamom with rose - so when I make this I will use rose water instead of orange blossom. Saves buying the Orange Blossom water too!

Love all you do, Claire. I’d love to try your version of galatobourico; i.e. a custard-filled phyllo pie. Can I tempt you with the idea of cutting the phyllo into strips (1/2”?) tossing them with melted, clarified beurre and Demerara sugar, and using that for the base (patted down firmly) and the top of the pie. Or try this with any pie filling, possibly even savory, sans the sugar. Happy Thanksgiving!

Made this for Christmas Eve. It’s not that daunting and my package of phyllo contained sheets where every single was torn. Still, I persevered and made recipe as written, save I used slightly less butter in the assembly (I spilled about 4 tablespoons on my counter) and I swapped flor di silica for orange blossom water. The pie was good but way over baked given the time in the recipe and I went for 45 minutes. Still burnt bottom layer. Also, my happy accident resulted in a good amount of melted butter pooling the pan after it was done and cooled. Guessing this recipe should use 10 tablespoons butter in the assembly. Filling was dope as written. Great way to use up left over nuts in my pantry and the leftover phyllo from a spinach pie. If I were to make it again, I’d cut the recipe in half and use a traditional pie plate. This is much easier than making traditional baklava. Also, wish the sugar syrup had a thicker consistency. Perhaps, it should contain less water?

That would be too salty. I suggest you rince the salt of the nuts, pat them dry, and then gently re-toast and dry them in the oven.
Could i bind the caramel with shredded fried filo thingies. Like in fhe Dubai chocolate? Maybe it gives it more of this crispy gone soft baklava vibes?

I recently attended a baking class offered by a mega-resort in Vegas, hosted by the master baker overseeing all bread production for almost 2 dozen venues. When showing us a challah, he demonstrated his preference to put egg wash in a spray bottle to avoid brush marks on the breads' surface.
I realize it's a technique practical for higher volume production. But watching the Phyllo nut tart show today, it made me wonder.... have you ever considered, or tried, putting the melted butter in a small food-safe spray bottle to deal with Phyllo? I know the solids might clog it, but that might be avoidable with repeated shaking, or partly clarified butter.
Hey Claire I love your videos I also love baking and I want to challenge you to make my favorite store bought cookies they used to sell them at Aldi as there own brand called Benton’s homestyle chocolate chip cookies until they were discontinued and for years I was searching for a cookie that tasted the same and I finally found it different brand called Matt’s chocolate chip cookies I would love to be able to recreate them at home if they ever get discontinued again 🥹 I hope you take me up on the challenge to find a recipe I can make at home thank you love your videos !❤❤❤

I've always wondered if you could apply melted butter to phyllo with one of those spray bottles made for oil? Using a brush always makes it feel sort of difficult.
It would probably solidify in the nozzle unless you kept in in a hot water bath the whole time

@@scorpionbraid Savoury version also exist, the Turkish one is Borek for example, the Egyptian one is gulash (not related to the European meat dish) spinach and feta and a common filling for Borek , the default filling in Egypt is spiced minced meat

Not a substitute but you can use Vanilla or Orange Bitters would be good I bet.

Kerrygold really kicked off the trend of better butter in the US. It's still the most widely available grass fed butter in the US.
Irish butter has a higher fat content than American butter. It also is a bit sweeter as it’s made from grass fed cows. Overall it’s better in baking as you get a more prominent flavour from it.
@ I understand it has a higher butterfat percentage… but as to grass fed… the US has A LOT of grass-fed dairy cattle. There are great tasting butter here in the US as on your side of the pond.
