You do realize you can just select an older version of the game from within the launcher, right? Almost every version ever released is still available from the launcher. You may need to separate certain files, but it'll still work.

You can use structure blocks to import custom structures into your world. Structure blocks read structure files, which are formatted in NBT. NBT is very similar to JSON and there are libraries for python that allow you to work using NBT. There is a limit to using structure blocks (they can only handle 32x32x32 areas iirc) but you can work around that by nesting structure blocks into structure files. Another approach would be using WorldEdit and loading schematic files, they are similar to structure files and aren't limited in size (and the formatting is also in NBT iirc) Something you might also want to look into is the //g command in WorldEdit. It allows you to select an area and then place blocks in it using equations. You can write functions using x,y and z variables that range from -1 to 1 depending on the location in your selected area. For example: "//g glass x^2+y^2+z^2

I've seen this cool mod for minecraft called TerraForged. It's a mod that makes minecraft more realistic looking and 'pretty'. Minecraft is such a big community. Just to contain the immense size of the planets without touching the height limit, you should do this: Create the celestial bodies and when you get to an extremely large size (Example: Earth was the largest in this video) create a mini replica of that Earth and start making it larger as you go again. Then keep on going, if it doesn't make sense, try going in this order. Example 1 (.) Example 2 (▪) Example 3 (◽) Example 4 (🔲) As you can see, they are becoming larger as you go on. Then, after the supposed largest one, create a mini replica of it, and keep going with more objects. Still if this makes no sense, I try to explain it in the best way possible. Cya'!
There's a mod called Chisel n Bits that will let you create things by one pixel per block. It's an older mod but you might want to check it out anyways. For an example you could build that factory with just one pixel.
In obs, select window view and set it to Minecraft, instead of display view. Another tip: press F1 to hide croshair, hot bar, etc. Good for screenshots Also u could try making the higher planets with mcedit on 1.11 (keep in mind that they changed the textures, and therefore colors of the blocks in 1.14) then transport them to 1.16
