    ~Ingredient List~
    1 Onion, chopped
    1 Green Pepper, chopped
    1 Jalapeno Pepper, chopped
    (You chopped the above with a nifty Genius Chopper)
    2 1/2 lb. Ground Chuck
    1-2 tsp. Coconut Oil to get the Ground Beef started with Browning
    SPICES:
    5 tbsp. Chili Powder
    2 Tbsp. Brown Sugar
    1 Tbsp. Oregano
    1 Tbsp. Cumin (Use Mortar & Pestle)
    1 Tbsp. Coriander (Use Mortar & Pestle)
    1 Tsp. each, Salt & Ground Black Pepper
    2 Tbsp., Minced Garlic
    1/2 Tsp each, Turmeric & Paprika
    Optional for Heat: Cayenne, Red Pepper
    TOMATOES:
    28 oz. can, Crushed Tomatoes
    15 oz. can, Diced Tomatoes
    15 oz. can, Tomato Sauce
    2 Cups Dried Pinto Beans
    4 c. Water
    Toppings: Shredded Cheddar; Hot Sauce; Crackers. ((I would add Sour Cream, a weakness of mine, and Chives and/or Scallions))
    Made with our new Pressure Cooker & it was a HIT

    Just got a pressure cooker a couple weeks ago and have been looking for a good chili recipe, so I tried yours tonight. My wife and I both agree that It's the best that we've ever made. Being that it's just the two of us, I halved the recipe and we still have plenty left over. Kudos!

    I reduced the water to 2 and 1/2 cups as I like it thick. Worked out great. I also added 30 minutes of cook time to get more tender beans. This is by far my best yet and favorite chili recipe. Thanks for sharing. You’re a fabulous chef. Would like to know what the brand of your pressure cooker is. Thanks

    i think a better thickening agent than a cornstarch or flour is, a pulverized tapioca rice. I saw that tip on some cooking show a few years ago. I like making chili, just haven't used my pressure cooker for it yet.

      I like using cornmeal with as my thickening agent in chili...it sort of goes with the theme, Lol!!!

    Hey i was just about ready to make my chili and because i haven't made it in awhile and just got my xl pressure cooker a few months back ... so i haven't tried making chili in it . I'm really glad i found your video i have almost all the spices you have the one thing i don't have is the coriander/anatto seeds wow they are the best thing to have on hand for flavor . i never knew you could crushed them up .. i can barely find them around here . anyway i use them in a diff way i learned that you put them in oil let it heat up to get the flavor and also use as food coloring for rice but they def put such a flavor and aroma in rice . just watching you add those flavors really got me excited about making it .. i think im going to use sazon since its the closest thing i have to it . sazon from goya with corriander and achote yummy i just hope it will be as good lol :) thanks for posting that video i look forward to watching the others . i will post to let you know how my chili comes out :0

    Love the video. Just a suggestion, I would reverse the images in the two screens. You're trying to focus on the ingredients and showcase what you are doing and how things look, but you've put that information in the tiny pop-up screen while the big screen is a wide shot of you, but pulled way back. Put you in the small screen but zoomed in and focus the big one on ingredients, items and technique type stuff. As it is now, I feel like I'm a mile away from you on both.
    For instance, I'm watching you pour out onions and peppers from the chopper, but it's so far away and small I can't tell if it's actually onion and peppers or parsnips and celery. You're making a point on the exact size of the chop but I can't see that.

      Those are cookie jars that look like jumbo cupcakes from Davis's cookies and the pepper is actually a crock pot from QVC. Thank you for watching!

    OK, this is cooking on the counter now. Making the recipe as the video shows. With everything in the pot and ready for the lid, the level is about 1 1/4" below the edge! This is my first go with an instant pot (Duo 6 qt) and worried about the food expanding too much. Well. we'll see in about 45 minutes! Will report back as to how the pot is and if the chili is a success or not!

      Had friends over and I served them this recipe. Like I mentioned before, I made it exactly as the recipe was put forward. It is a nice texture and a medium thick consistency. I think my friends were being nice by saying how wonderful it tasted but I then watched them add more and more salt. I too found I was having to add salt to the dish as it just tasted like there was something "missing".
      I then took leftovers to a hotdog lunch today. I asked for a critique and it was unanimous that it needed more salt. I'm no spring chicken and hold back on salt when sharing a dish as most people think I over salt (old taste buds!) but this recipe, I feel should have started out with 1 tablespoon of salt as it make a solid 6 quarts of chili. Also, as a side note, I set the timer for 50 minutes on my Duo 6qt. and next time I think I would make it 55 minutes.. YMMV Would I make it again? Yes I will!!

    I am curious if you had added a Carolina Reaper pepper. Just 1 pepper?

      When making chili for a group of people I keep it relatively mild. They can always add some hot reapers, ghost, or scorpion peppers to their bowl to make it hotter if they desire. Thanks for watching!

      I have several pressure cookers of all sizes and use this one when I'm making larger batches of stock or chili. I'll probably be using it soon since I'm going to make a big batch of this chili now that the fall/winter weather is approaching.

    I tried to follow along with an InstantPot. Mine is 6 quarts. You never explained how big yours is or the temp you were cooking. My pot barely contained the chili even after reducing the ingredients. I like your style but I don't know how to cook. Thanks for being easy to follow.

    You won me over by not draining the beef after browning that, then sauteing the veggies in the beef and beef drippings. Nearly everyone makes the mistake of draining the beef drippings where the best beef flavor is.

      I usually use high pressure if the electric cooker has multiple settings. The difference is usually 11 psi vs 7 psi, depending on the brand.

    I was wondering why the beef isn’t drained of fat once browned? Can it be drained or will the recipe not turn out?

      I always drained the grease from my cooks, Can't stand that greases mess floating on top. He did use ground chuck so he properly didn't have a whole lot of grease. just saying.

    I'm going to ask this question. It was kinda answered as yes BUT will this in fact all fit into a 6 quart cooker and not go over the line??!! Great sounding recipe but sorry to say, the chef just doesn't seem to have the time to answer any other people asking.

    No close up? You didn't say anything about the pressure cooker, but I recognized it. And this brand does not have a saute button, so you need to Brown meat in another setting, you didn't talk about that. These things would have been nice for those who don't know.
