I made this and it tastes AMAZING!! Instead of 200g white sugar i used 100g brown and 100g white sugar. Instead of 3 tbsp orange zest and 1 tbsp orange juice, I used the zest and juice of 1 medium lemon, and i also added a splash of vanilla essence and i left out the raisins cause i don't like them haha. Then i served it with cream cheese mixed with a little honey :) 10/10 and I will definitely be making this again!! Thank you for sharing!!
This cake is delicious. I bake this almost weekly basis. I changed regular flour to oat flour to be on healthier side and bake for 1 hour. Thank you so much for this recipe

Okay. I tried this. And you should be careful on the carrots. It's 3/4 of a cup and not 2 cups. This makes the cake too heavy to rise. So. It becomes flat

I made this cake yesterday and it turn out so soft and delicious. Best carrot cake that I have baked so far. But just for your information, I reduce the sugar to around 70g, use 3 large eggs and also added 50g oats (blended). Thank you so very much for sharing this recipe.😋😋😋

Btw same thing gors with lemon. And if any recipe requires lemon zest YOU SHOULD ADD IT especially if it was a pasta recipe, peel the outer layer of the lemon (only the bright yellow on the surface) and add it to ur recipe IT IS MAGIC

@@di8119 No, i had orange zest in my freezer so i used it. I think it will be fine with lemon zest too but orange zest always adds a great flavour. If you won't have both, i think vanilla extract will do ..
@@sakit4829 Yes, for me at least. I'm diabetic so i usually don't add more than 2 tbsp of sugar to my cakes. The carrots are naturally sweet. The raisins too. So, it's up to you... If you like less sweet, you will definitely like it ...

I tried your recipe and tweaked 20% of the white sugar for brown sugar, added half cup of orange juice, added walnuts and changed the vegetable oil to melted butter n it turns out soooooo good! Made this 2 days ago. First successful cake bake. Absolutely delicious. I left out the currants as I don't like them. But topped it with cream cheese frosting and walnuts. Converted 2 carrot cake haters into lovers with this cake. Thanks for the recipe. Loved the hint of orange was perfect. The texture wasn't what i expected but could be my oven. Will be making this often probably cupcakes next time
I've just made one, and the secret is to balance between liquids and the shredded carrots, because they will be juicy enough to add an extra liquid to the ingredients, and a pinch of caraway seeds would be nice if added as well. I wouldn't prefer to add raisins though.
This recipe does not req. milk/ butter. This cake looks moist & soft without full of butter / milk. I am a lactose intolerance. I am glad I've find this recipe.

Tried this today using a rice cooker and my family loved it! Added chocolate chips to it and once it was baked we drizzled some orange juice over the cake. Tastes good!
@@biancaalmeda1963 Sure! I used greased parchment paper and placed it into my rice cooker. Poured the batter, sprinkled some (actually lots of) chocolate chips, and then let it cook for about 5-6 rounds (this actually depends on your rice cooker, mine takes about 5-6 rounds before it's fully baked). For the drizzle, just mix some freshly squeezed orange juice with approx. 1/2-1 tsp of sugar or however sweet you want it to be and then just pour the mixture over the cake (not too much juice tho, you don't wanna make the cake soggy). Chill cake in the fridge for an hour or so and then it's time to indulge! :) good luck trying!
Did something similar but I found the difference in texture to be in the intensity of beating the wet ingredients together. I simply mixed with minimal beating. Awesome 👏🏾

@@vee_ciutz It depends on the oven also but I would say use toothpick to check if it done or not most videos I seen said the temp should be 325-350 F.

Made this 2 days ago. First successful cake bake. Absolutely delicious. I left out the currants as I don't like them. But topped it with cream cheese frosting and walnuts. Converted 2 carrot cake haters into lovers with this cake. Thanks for the recipe. Loved the hint of orange was perfect. The texture wasn't what i expected but could be my oven. Will be making this often probably cupcakes next time

I've just made one, and the secret is to balance between liquids and the shredded carrots, because they will be juicy enough to add an extra liquid to the ingredients, and a pinch of caraway seeds would be nice if added as well. I wouldn't prefer to add raisins though.

This recipe does not req. milk/ butter. This cake looks moist & soft without full of butter / milk. I am a lactose intolerance. I am glad I've find this recipe.

I baked this yesterday and it came out as you said soft moist and delicious 😋 there is only one thing in the recipe you call for 3 Tablespoons of orang zest I used 1 and I thought in the video and recipe there is a typo , that orange zest in the video doesn’t look like it is 3 tablespoons so I decided to go with 1 and I’m so happy with the result . Tried this today using a rice cooker and my family loved it! Added chocolate chips to it and once it was baked we drizzled some orange juice over the cake. Tastes good!

I used greased parchment paper and placed it into my rice cooker. Poured the batter, sprinkled some (actually lots of) chocolate chips, and then let it cook for about 5-6 rounds (this actually depends on your rice cooker, mine takes about 5-6 rounds before it's fully baked).
For the drizzle, just mix some freshly squeezed orange juice with approx. 1/2-1 tsp of sugar or however sweet you want it to be and then just pour the mixture over the cake (not too much juice tho, you don't wanna make the cake soggy).
Chill cake in the fridge for an hour or so and then it's time to indulge! :) good luck trying!

If you are using a good oven at 170 degs 25-30mins will do. I made the cake today ,has come out really well.

Did something similar but I found the difference in texture to be in the intensity of beating the wet ingredients together. I simply mixed with minimal beating. Awesome 👏🏾
