    ESPRESSO IS AN ART - NOT ALL ABOUT PRESSING BUTTONS AND WAITING.
    And the coffee machines of the La Pavoni Levers deliver it beautifully. Characterised as the classic lever machine, gain control over your desired flavour and strength with a brewing pressure gauge, exclusive to the Professional model of espresso machines. Capable of preparing 16 cups of coffee with a reliable 1.6L boiler, it’s made largely from cast brass. The La Pavoni is built to last.
    La Pavoni Professional Lever espresso machines instructions:
    Fill the boiler and wait no more than 5 min for it to heat up.
    Fill the single or double basket with freshly ground coffee and tamp.
    Insert the portafilter into the group-head of the coffee maker
    Lift up the lever to begin pre-infusion of the coffee
    Begin pressing down on the lever for espresso brewing
    Use the pressure gauge to control flow and extraction
    Complete the full press and enjoy your full flavoured espresso shot.
    La Pavoni espresso machines have been produced for well over a century, ever since the founder of the company acquired the patent all the way back in 1905. Originally produced on a small scale in Milan, over the years the company has grown to become one of the best known Italian coffee brands.
    However, this rich history is not all there is to be said for the La Pavoni brand. Pioneers in production techniques including the use of thermoplastics, the company combines its extensive experience with an outlook focussed on innovation, research and excellence. Great attention has been paid to ergonomics, as well as to research into new technological developments. Alongside the more traditional lever and semiautomatic machines, La Pavoni introduced electronic machines and have incorporated volumetric dosing across some of the range.
    Catering to both the domestic and commercial markets, they have a staggering array of products on offer. For the home coffee lover or cafe owner, a choice of lever, semi-professional, combined and manual machines ensure there is something for everyone, from the traditionalist to the connoisseur in a hurry. Not every La Pavoni espresso machine’s for sale, however; an original version of the La Pavoni Professional Espresso Machine is on permanent display in the Museum of Modern Art, New York.

    Really good video. I recently bought a 1970s Europiccola and not much has changed apart from the basket size. You picked out a lot of the things you need to consider when you start using one and they’re really not suited for lots of back to back shots, but it’s a bit like golf - can be frustrating as heck, but the satisfaction you feel when you make a great shot is so much greater for that.

    question! a normal espresso uses 9 bars of pressure, but the pressure gauge on the machine only goes up to 2 bars. why is this, and will less pressure on the la Pavoni matter when brewing? thanks and all the best!

    • @AlternativeBrewing
      @AlternativeBrewing  Год назад +1

      this is not the brewing pressure but the boiler pressure used to produce steam pressure, for steaming milk. The 9 bars of pressure is created by pulling the lever down - and the back pressure is provided by the fine grind (on an automatic machine - the pressure is also produced by the electric pump.)
      The 2 bars is related to the natural pressure of the water when heated for steam. Here is an example of what pressure is at different stages of the water being heated.
      0 bars = 100ºc
      0.1 102.66
      0.2 105.1
      0.3 107.39
      0.4 109.55
      0.5 111.61
      0.6 113.56
      0.7 115.4
      0.8 117.14
      0.9 118.8
      1 120.42
      1.1 121.96
      1.2 123.46
      1.3 124.9
      1.4 126.28
      1.5 127.62
      1.6 128.89
      1.7 130.13
      1.8 131.37
      1.9 132.54
      2 133.69 .... this is way too hot for brewing coffee!

    I have a la pavoni pro, I can get great shots from it. But never get a good frothing out of it. Maybe need to change the tip to a single hole tip. Besides, the hot boiler intimidates me a bit... later found a baby faemina, and using it everyday. I still use la pavoni from time to time, but baby faemina is easier to use daily.

      Single hole tip makes the best difference. I tried so hard using the 3 holes tip, and I never got good frothing for lattes, even with higher pressure (my pressurestat is 1.2bar). Highly recommend the single hole, my froth is very uniform with no bubble. It's a cheap upgrade and it makes a world of difference.

    Hi, for your average joe whose priority is the best tasting espresso, how will this la Pavoni compare against the rancilio silvia v6 and the gaggia classic pro? Should i consider anything else for the price?

    • @AlternativeBrewing
      @AlternativeBrewing  2 года назад +1

      IMHO I'd look at the Gaggia Classic Pro in this price range. This will save you money to purchase a great grinder to go next to it. The Grinder - in this instance will cost the same if not more than the machine - but the quality and consistency from say a Gaggia Classic Pro - and something like the DF64 Grinder will be superb.

    • @AlternativeBrewing
      @AlternativeBrewing  2 года назад

      Do you have coffee in the basket? Lifting the lever does make water enter in to the brew chamber. So long as you have enough coffee in the basket and it is ground fine enough - there should not be any issues.

    • @AlternativeBrewing
      @AlternativeBrewing  11 месяцев назад +1

      Not really. The La Pavoni you are manually opening up the valve for water to enter a chamber under pressure - then using the lever again to press that water though the ground coffee.- whereas with the Expobar - the lever actuates a pump that pushes water out of the boiler in to the grouphead.
