麵糰材料:
高筋麵粉 250 克 (1½ 杯+ 3 湯匙)
鹽 2 克 (¼ 茶匙)
牛奶 155 毫升 (½ 杯+ 2 湯匙 + 1 茶匙)
速發乾酵母 7 克 (2 茶匙)
白砂糖 56 克 (4½ 湯匙)
無鹽牛油/奶油 (軟化) 40 克 (2¾ 湯匙)
糖水及其他配料:
白砂糖 24 克 (2 湯匙)
熱水 11 毫升 (1 湯匙)
無糖椰絲 適量
奶油材料:
無鹽牛油/奶油 (軟化) 216 克
糖粉 80 克 (¾ 杯)
牛奶 15 毫升 (1 湯匙)
雲呢拿香油/香草精 2 克 (½ 茶匙)
Bread Dough Ingredients:
250 grams (1½ cup + 3 tablespoons) bread flour
2 grams (¼ teaspoon) salt
155 ml (½ cup + 2 tbsps + 1 tsp) milk
7 grams (2 teaspoons) instant dry yeast
56 grams (4½ tablespoons) white granulated sugar
40 grams (2¾ tablespoons) unsalted butter, softened
Syrup and topping Ingredients:
24 grams (2 tablespoons) sugar
11 ml (1 tablespoon) hot water
Unsweetened Shredded Coconut, for topping
Cream filling ingredients:
216 grams (2 sticks) unsalted butter, softened
80 grams (¾ cup) powdered sugar
15 ml (1 tablespoon) milk
2 grams (½ teaspoon) vanilla extract

我酵母只用了2.5g,但是牛奶用了180g,其他的没改,很柔软的。柔软的关键在于黄油的大量加入,谢谢博主的分享

I just finished making this recipe and they came out fantastic! I added a couple more grams of powdered sugar because I have a sweet tooth and it was still delicious! Would recommend trying this recipe :D

@@Tasty_Cooking_Studio Do some bakeries add salt to the cream filling? I remember when I use to eat them at the HK bakeries the cream always have a salty after-taste. It was my favorite!

請問如果當天沒吃完,可放室溫隔夜嗎?還是要冷藏或直接冷凍起來呢?(因為有奶油餡所以有點疑惑)
冬天是可以的, 夏天最好放入雪櫃冷藏因為怕奶油餡變壞

我今天剛剛做了這個包,你講190度焗10分鐘,時間到了,我試食一個,但是未焗熟,我立刻再放回焗多6分鐘,才焗熟呀,不知為什麼呢?
做形後的小麵糰不適宜過大, 唔係就要焗耐D了. 焗爐分別有用電力或煤氣兩種, 如果是用煤氣焗爐的話, 通常要焗多幾分鐘, 我會建議看麵包上色程度, 金黃色為標準.

把焗盤放高一層, 這樣可以改善底部過黑

因為已經夠柔軟,所以不用加湯種。
