I used to use a lot of MSG in a seasoning I made. I began making this seasoning as teen ager. When I was about 35 years old I began getting frequent and bad migraine headaches. The doctor convinced me it was due to MSG so I began leaving it out of the seasoning i make. I also tried to eliminate it from my diet at all costs. An effort that is nearly impossible to do. I spent 12 years working hard to do. The migraines slowed in frequency but never really ceased. I began consuming MSG in moderate amounts about four years ago. Now I hardly take notice if an item has MSG or not. Two years ago I had an eye surgery which improved my vision. Since then, I have had only two migraines. I used to get at least two a week. As I learn more about MSG I’m becoming more convinced that my migraines were vision related and not MSG related. I am now almost 50 years old and enjoying MSG again. But for me it was never really about the brisket or other meats, it was about spending time with with my teenage son. Your videos and encouragement changed our lives forever. I often use anchovies in certain dishes, but obviously, it does not lend well to American BBQ flavor characteristics. I have yet to experiment with MSGF, but I have no fear of it. It's funny you say that. A Vietnamese friend of mine has a restaurant. One day he was making me some chicken wings. One ingredient was fish sauce. I was thinking this can't end well. Boy was I WRONG! To this day, the best chicken wings I've ever had the privilege to eat.

I make a BBQ sauce that has anchovies, but I have learned to dial it back in order avoid overwhelming the flavor. I guess if I was doing BBQ for someone in Southeast Asia, I will be safe incorporating more, but for the average American, it becomes an issue. Too much caffeine and chocolate and I get a very bad migraine headache. Withdrawal from caffeine and/or chocolate and I get a bad migraine headache. So I mostly avoid chocolate these days and I have switched to caffeine free Coke when I feel like a cola soda.
Hey Daniel, good question. Short answer is that's too much. I would use a ratio of 10:1 for salt to MSG. That is, for 10 grams of salt, add 1 gram of MSG. Much of the issue with MSG is the dosage which is too high as I've seen folks use it in the same amount of salt like 1 teaspoon which is way too much. I refer you to the Latin words "Sola dosis facit venenum" for "The Dose Makes The Poison" from the Father of Toxicology Mr. Paracelsus, Swiss physician from 15th century.
If I’m not mistaken, all the items you stated in the beginning are sources of free glutamic acid not msg. Msg is bound to salt and as soon as its exposed to water, the glutamic acid is released. Most glutamic acid in nature is bound to other amino acids. When you cook it, you release it, hence flavor. I know it affects me in larger amounts (too much cheetoes have given me migraines) but as long as I use it in moderation, i’m ok. Either way, i just avoid it as much as I can but I dont feel its as bad as it used to be. I think the biggest issue ppl have with it is they dont hydrate enough when they use it which can cause issues because it is bound to salt after all. Either way, good info 👍
If you are allergic, please stay away from cheeseburgers, KFC, McNuggets, Doritos, tomato sauce, and many other products that have MSG. I teach my students Sola Dosis Tacit Venenum which is Latin for "The dose is the poison" from the 15th century Father of Toxicology the Swiss physician Perecelsus. For example, even water and oxygen can kill you in the right dose. Exercise caution when cooking and listen to your body and avoid anything your body does not like.
Nice video Harry. About a year ago I spent a full hour on Google researching MSG. I found absolutely nothing, no evidence at all, that MSG was harmful in any way. It's all hype. Season your food and enjoy!

My sister has a food science degree from Cal State Northridge. MSG is no worse for you than conventional sodium. The anti MSG movement in America is partially rooted trying to disrupt the Chinese restaurant business because they made false claims that it was unhealthy. I'm Chinese American and have been eating in Chinatown/ Monterey park my whole life and nothing bad has happened to me.

Great video, really informative. When you say use 1/3 msg to salt, is that alongside the salt or in place of? So for 600g of salt would I add 200g of msg, or substitute 200g of salt for msg (so only 400g of salt)?
I have done both options. I'm not allergic so I use MSG to flavor my food as I'm trying to reduce my salt intake. That is, although I can use salt+msg, for my home cooking, I skip the salt and use only MSG.
I even though I don't use any MSG powder myself (because that's my art of cooking), I see some good points when to use MSG after all: Using too much seaweed kelp will raised the iodine level, which is not healthy for your thyroid. At this point you are better off with using pure MSG instead. If you wanna cook veggie dishes, your umami sources might be a bit limited, because not all umami vegetables fit to a certain recipe. Then again, it makes sense using MSG.

Ive have some of those Chinese restaurant symptoms sometimes, but at places where they serve MSG free food. I use Accent on my steak all the time never any side effects, delicious !!! Thanks Harry for your movies and skills

30 years ago when my wife lived in NYC, she saw a sign "No MSG" on a Chinese restaurant. She thought it meant they don't deliver to Madison Square Garden. :D My family grew up on Accent too, I still don't really like brussel sprouts. hahaha
Good video on the science of it. I bought a rub in March back when I got my Smokefire that had MSG in it and my wife won't let me use it. I told her the data had changed on MSG. Can't return it due to COVID19 at least I don't think they are accepting returns at this time. I am going to have to use it on some burgers or something just for me lol.
You may want to have your wife sample McNuggets, Doritos, and KFC. If she has a reaction, then she is probably allergic.. If not, then it's the placebo effect, or nocebo effect. Some folks are genuinely reactive and is somewhat related to a seafood allergy where sea creatures have an abundance of glutamic acid.
My family and I lived in Kenya for 20 years. The local msg product there is called Royco, and Kenyans put it in almost everything. And it just makes everything better!

Add 3% by weight to any fav rub recipe you like. Simple one is S&P. Mix 47 grams common table salt + 50 grams coarse black pepper + 3 grams MSG (Accent)

Add half the salt and add a little msg. Taste and adjust. Depending on how you process taste, some folks like less salt as the MSG rounds out the savory flavors. For others, additional salt is needed for their brain to perceive a more umami flavor. Feel free to experiment on your self and your family in blind taste test of +salt and -salt scenarios

When your tongue gets tingly and you feel a buzz / headache, it's likely too much. Just a tiny bit goes a long way. Avoid if you are allergic or sensitive to excess monosodium glutamate.
I found out I have a MSG food sensitivity, so either I have to make my own rubs now or buy the No MSG rubs which are few and far between outside of the US. I previously used various types of bought rubs and was wondering why I used to feel really bad afterwards and often into the next day. So my friends and I ran the same experiment numerous times last Summer, we made 2 batches of the same rub (same ingredients), but one rub had MSG added, the other without. I was blind tested and I didn't know which rub were used. Every time the MSG rub was used I was unwell afterwards.
Love your body and listen to it and stay away from foods that it does not like. Don't eat McNuggets or KFC also and many foods that have it. Also shellfish may also be a problem. Good luck

Just my opinion, but just about anything food product used in moderation is not harmful to you. When I was a college student (many moons ago) I ate Chinese food almost every day because it was inexpensive and delicious. It didn't take long before I started developing serious headaches. I don't remember how I figure this out, but one day I asked the restaurant if they could make my meal without MSG. With reduced MSG I could eat Chinese every day with no ill affects. So while it's delicious I learned that MSG is not my friend. I've since discovered specific brands of potato chips with MSG that also give me a headache. If I stick to small portions of food with MSG I'm fine. Just sayin... The MSG headache thing is real, at least it is for me.
MSG is a killer and very dangerous. I ate a 7lb brick of it in 35 mins and nearly died. There, now I have validated all the soccer mom and Karens fears.
My guideline when consuming anything questionable that can be harmful to my body is, my uncle served three tours in Vietnam jumping out of airplanes with the 101st airborne and died here in Chino Cali by a drunk driver. Is it safe is one thing. Do people have reactions to it is more important question. My wife get headaches like many people , some friends get nauseous, a colleague feels tingling in his face. Even without these side effects, I don't find it gives anything life-changing , so it's not really I even think about. But just like any food allergies and reactions, there are many pretty disturbing consequences.. Having headaches or diarrhea is one thing but having palpitations or numbness is a whole other can of beans when it comes to reactions and that makes it a non starter for people. They heard real reactions of friends and family and are wary. Which is funny because some of those insanely idiotic hot peppers are way more harmful than MSG all of the time while only a certain amount of msg users feel discomfort.
We have 7.5 billion people on our tiny crowded spaceship and within them, there are those who are allergic to MSG which correlates to folks sensitive to shellfish due to the high glutamic acid levels. Know your body and listen to it to determine if certain foods need to be avoided. You body will let you know. Ditto for MSG sensitivity. Avoid if you are sensitive and treat your body temple wit love.

I think MSG gets a bad rap because it’s used in a lot in highly processed foods. It’s not the MSG that is bad for you but the processed highly refined ingredients in boxes and bagged foods. MSG gets lumped in with those highly processed ingredients so people think it’s evil.
We have polarized opinions and some folks don't believe science. For example 6 million Americans will go to their death bed believing the earth is flat. Others believe that vaccines kill people and Bill Gates philanthropy projects is just a tool for mind control of the humans population. I say everyone should arm themselves with the truth and I believe the rigor of data and evidence required by the scientific principle results in getting you to the truth.
The only time MSG is bad is if you have an allergy to it. Thats it. Plain and simple. Its also a very small percentage of people who have this allergy.

Most glutamic acid in nature is bound to other amino acids. When you cook it, you release it, hence flavor. I know it affects me in larger amounts (too much cheetoes have given me migraines) but as long as I use it in moderation, i’m ok. Either way, i just avoid it as much as I can but I dont feel its as bad as it used to be. I think the biggest issue ppl have with it is they dont hydrate enough when they use it which can cause issues because it is bound to salt after all. Either way, good info 👍
If you are allergic, please stay away from cheeseburgers, KFC, McNuggets, Doritos, tomato sauce, and many other products that have MSG. I teach my students Sola Dosis Tacit Venenum which is Latin for "The dose is the poison" from the 15th century Father of Toxicology the Swiss physician Perecelsus. For example, even water and oxygen can kill you in the right dose. Exercise caution when cooking and listen to your body and avoid anything your body does not like.

My sister has a food science degree from Cal State Northridge. MSG is no worse for you than conventional sodium. The anti MSG movement in America is partially rooted trying to disrupt the Chinese restaurant business because they made false claims that it was unhealthy. I'm Chinese American and have been eating in Chinatown/ Monterey park my whole life and nothing bad has happened to me.

When you say use 1/3 msg to salt, is that alongside the salt or in place of? So for 600g of salt would I add 200g of msg, or substitute 200g of salt for msg (so only 400g of salt)?
I have done both options. I'm not allergic so I use MSG to flavor my food as I'm trying to reduce my salt intake. That is, although I can use salt+msg, for my home cooking, I skip the salt and use only MSG.

I even though I don't use any MSG powder myself (because that's my art of cooking), I see some good points when to use MSG after all: Using too much seaweed kelp will raised the iodine level, which is not healthy for your thyroid. At this point you are better off with using pure MSG instead. If you wanna cook veggie dishes, your umami sources might be a bit limited, because not all umami vegetables fit to a certain recipe. Then again, it makes sense using MSG.
Ive have some of those Chinese restaurant symptoms sometimes, but at places where they serve MSG free food.

Can't return it due to COVID19 at least I don't think they are accepting returns at this time. I am going to have to use it on some burgers or something just for me lol.
You may want to have your wife sample McNuggets, Doritos, and KFC. If she has a reaction, then she is probably allergic.. If not, then it's the placebo effect, or nocebo effect. Some folks are genuinely reactive and is somewhat related to a seafood allergy where sea creatures have an abundance of glutamic acid.

Add half the salt and add a little msg. Taste and adjust. Depending on how you process taste, some folks like less salt as the MSG rounds out the savory flavors. For others, additional salt is needed for their brain to perceive a more umami flavor. Feel free to experiment on your self and your family in blind taste test of +salt and -salt scenarios

My own seasoning always ,using basic awesome herbs and spices ...msg is in it ..it origional for me was me working on a subtle beef seasoning...one that wouldn't be too salty or overpower the "dish" it's amazing. And it works and is delicious.....flavor flavor flavor!!! Msg is NOT harmful. We are designed to detect it. In aactuality it more than likely has great health benefits. I found out I have a MSG food sensitivity, so either I have to make my own rubs now or buy the No MSG rubs which are few and far between outside of the US. I previously used various types of bought rubs and was wondering why I used to feel really bad afterwards and often into the next day.
So my friends and I ran the same experiment numerous times last Summer, we made 2 batches of the same rub (same ingredients), but one rub had MSG added, the other without. I was blind tested and I didn't know which rub were used. Every time the MSG rub was used I was unwell afterwards.
Love your body and listen to it and stay away from foods that it does not like. Don't eat McNuggets or KFC also and many foods that have it. Also shellfish may also be a problem. Good luck

Just my opinion, but just about anything food product used in moderation is not harmful to you. When I was a college student (many moons ago) I ate Chinese food almost every day because it was inexpensive and delicious. It didn't take long
before I started developing serious headaches. I don't remember how I figure this out, but one day I asked the restaurant if they could make my meal without MSG. With reduced MSG I could eat Chinese every day with no ill affects. So while it's delicious I learned that MSG is not my friend. I've since discovered specific brands of potato chips with MSG that also give me a headache. If I stick to small portions of food with MSG I'm fine. Just sayin... The MSG headache thing is real, at least it is for me.

All the evidence agaisnt MSG boils down to one anecdote of a guy getting a headache after eating at a chinese buffet.
In my journey of life, I've learned, first hand, that the greatest evil is Ignorance. Second is arrogance. So, I do my best to educate myself and share my knowledge. However, I acknowledge those that believe that we did not go to the moon and that the world is flat!

Is it safe is one thing. Do people have reactions to it is more important question. My wife get headaches like many people , some friends get nauseous, a colleague feels tingling in his face. Even without these side effects, I don't find it gives anything life-changing , so it's not really I even think about. But just like any food allergies and reactions, there are many pretty disturbing consequences.. Having headaches or diarrhea is one thing but having palpitations or numbness is a whole other can of beans when it comes to reactions and that makes it a non starter for people. They heard real reactions of friends and family and are wary. Which is funny because some of those insanely idiotic hot peppers are way more harmful than MSG all of the time while only a certain amount of msg users feel discomfort.
We have 7.5 billion people on our tiny crowded spaceship and within them, there are those who are allergic to MSG which correlates to folks sensitive to shellfish due to the high glutamic acid levels. Know your body and listen to it to determine if certain foods need to be avoided. You body will let you know. Ditto for MSG sensitivity. Avoid if you are sensitive and treat your body temple wit love.

I think MSG gets a bad rap because it’s used in a lot in highly processed foods. It’s not the MSG that is bad for you but the processed highly refined ingredients in boxes and bagged foods. MSG gets lumped in with those highly processed ingredients so people think it’s evil.
We have polarized opinions and some folks don't believe science. For example 6 million Americans will go to their death bed believing the earth is flat. Others believe that vaccines kill people and Bill Gates philanthropy projects is just a tool for mind control of the humans population. I say everyone should arm themselves with the truth and I believe the rigor of data and evidence required by the scientific principle results in getting you to the truth.
