  • I've wanted to make an MSG video for a LONG time! Today I'm going to explain what is MSG and How to use MSG while cooking! MSG makes good food tastes better! But does it cause headaches??

    My mom is one of those people who claim to get headaches from msg. I’ve been cooking with msg for the last 5 years and never told her. No headaches. Maybe one day I’ll let her in on my “secret” ingredient.

      @@killswitch5193 nope, placebo is when you guve sugar pills to someone and tell them is a strong medice for exactly the issue they have and they get magically cured .
      What that mother has is paranoia, she is EATING an especific coumpund that she claims make her ill, but only get sick ehen she is told IS IN HER FOOD, that is just strong paranoia, she gets headache out of stress, which is a VALID source for a headache

      @@jjba3571 placebo and nocebo are the "good" and "bad" versions of the same effect. The term placebo is a lot of times used in the place of nocebo because the word is more common even if it loses the latin meaning of the word

      Yeah that one was complete BS. MSG in it's own doesn't taste like much at all but it's very good at making crap taste good. Doritos and pringles are basically just that. MSG is harmless unless it makes you eat things that aren't harmless.

      @@christopherstein2024 "it's good at making crap taste good" I object to that. There is a lot more at play than just MSG.
      MSG makes flavors more pronounced and enhances them, but if something tastes bad without MSG, it will only make it worse.
      Doritos for example have all kinds of spices and artificial flavorings and MSG helps bring them out so you don't taste the vegetable oil as much...
      Tried making Doritos approximation at home without MSG and it did taste different, but it was still tasty (in that junk food way of tasty).

    A lot of companies bypass the addition of MSG by adding yeast extract (which is loaded with glutamates) so they don't have to say there's added MSG in the package. Guess that's why Australians love their vegemite.

      For sure! After I cut off the crowns/top parts, I keep the stem and later cut it up like I do carrot strips and will stir fry or steam it. They're underutilized

    I was born in 1961. As a child, Accent was always in the spice cabinet. But then it disappeared. My parents and grandparents just quit using it. Later in college I realized it was MSG and I guess my family believed the bad press. Thank you for this video. I want to decrease salt in my diet. I am ordering some Accent today.

      Keep in mind you won't want to add MSG to certain dishes that use salt. MSG is an alternative, but you may not want the savory aspect in some dishes. Easy examples being a lot of Desserts and baking.

    My mom fear mongered me my entire life about MSG and just recently I found a little package of it in my parents' cupboard. Was like wtf.
    Flash forward to tonight and im watching this video after my mom went to bed. My dad comes in, overhears the video, and goes..."you know, MSG is actually harmless. Post-WWII anti-Japanese propaganda. In fact, theres some in the pantry. I use it sometimes. If you dont tell your mom that its in there, she can't tell. And she will love the food." im like OMG lollllll...
    I feel like my whole life is a lie!!!!

      Sounds like a plausible explanation for the origin of the myth. Right now it is spreading because fear mongering pays, and then they sell "himalayan salt", which is too full of heavy metals to be used as road salt....

      Jokeritu yes we should. Our economy relies on people and animals to constantly eat the corn, soy and wheat that’s being produced in the US. Unfortunately these foods taste like paper and no one would eat them unless MSG is added to the food products made from these crops to make them tasty. MSG is also added to animal feeds to fatten them up believe it or not, so we the sheeple spend more and eat more of them because they are so tasty! So, unless you want our economy to suffer, MSG must stay in the foods and we the sheeple should continue gulping them down! Just line up, pay up, eat up and shut up. The truth often hurts!

    Well you better not eat:
    - Most fast foods, notably KFC, chick fil-a, Mcdonalds
    - Most chips, notably doritoes and pringles
    - frozen tv dinner meals
    - canned soups like campbell
    - processed meat like hot dogs, lunch meats, beef jerky, sausages, smoked meats, pepperoni, and slim jims
    - any condiments such as salad dressing, mayonnaise, ketchup, barbecue sauce, and soy sauce
    - instant noodles/ramen
    - soup stocks. bullion cubes
    -NOTABLY (tomatoes, parmesan cheese,)
    - mushrooms, onions, cabbage, green peas, spinach, mushrooms, broccoli, corn, beets, anchovies, kelp/seaweed on your sushi

      My mom thinks she's allergic to MSG. She's been brainwashed by nutbags like Dr. Oz. I made her pasta with sun dried tomatos and parmesan cheese, two of the foods with the highest natural MSG content. Wouldn't you know it, her MSG allergy wasn't triggered! When I explained to her that she just ate a bunch of MSG she thought I tried to poison her...

    I want to say thank you, sincerely, for making this. This is a battle I've been fighting for a while now. so many people, particularly ones who claim to be healthy eaters, have tried to argue that its bad for you when its not. I am a professional, trained chef and i have a focus on food science, so it is always frustrating hearing people who don't know what they're talking about try to vilify something they don t understand in food science. Thank you.

    I'm a personal Chef and back in college I actually did a research paper on the Sigma of MSG which turns out to be ALL about RACISM! Back in the late '60s and early '70s, NYC Asian restaurants were starting to get more and more popular and sales started getting hirer and hirer. Some or I should say Most of course didn't like it. So secretly Non-Asian restaurant owners took Asian food to laboratories to find out what was in it. It was discovered that a form of salt MSG Monosodium L Glutamate enhanced the flavor of salt and made the food taste more savory. So we know what happens next?? Those Non-Asian restaurants started screaming MSG is bad for you just to make real Asian restaurants suffer. Unfortunately, the bad word of mouth, and also public bashing made sales drop, and made people scared to consume MSG. So Asian restaurants were forced to remove it from their cooking. That's why when you go to some Asian restaurants on the menu in bold lettering NO MSG. This is a shame because now after many years of research they have determined MSG is not harmful, or life-threatening. The scare campaign was actually a HATE campaign! There are many products out on the market that most consumers eat that have always contained MSG but they didn't mention those because they were trying to put Asian restaurants out of business. Today you can find MSG at/in KFC, Chick-fil-A, Campbell's soups, Doritos, Pringles, and a whole lot more!!! I use it in 90% of my cooking especially baking when salt is one of the ingredients. I get RAVE reviews for my Cinnamon Rolls!! Oh, by the way, I got an "A" on my research paper and my professor was originally from Vietnam! 😛❤🔥💋

      Wrong. It's all about sodium. The symptoms people complain about the most, are consistent with mild dehydration. If a person isn't used to eating very savory foods (foods with a lot of umami) they may not drink enough fluids to help flush out the excess sodium which can cause symptoms of dehydration. MSG was discovered from kelp in Asia, so it's more heavily used in Asian cuisines, and this would cause cases of mild dehydration.
      What is it with westerners and their pathological obsession with race? It's such a stupid and unscientific assumption.

      The same section where a guy proved that chocolates are alive and things like that... it was't as much anti-asian as it was a prank...

      You dont even need glutamate per se, since you are in fact, part glutamate. Its one of the amino acids our body produces. Saying youre allergic to glutamate is like saying youre allergic to your own body, Insane

    My husband sent me the link to your video...I'm so glad he did. I really appreciate you explaining this about MSG. I have some in my cabinet and I've only used it on a shrimp lo mein dish that I learned how to make not too long ago. I wasn't sure about MSG...when we went to the Asian market to buy some we even got negative responses that we were buying it. I never thought of using MSG in other savory dishes, but I'm going to now! Thank you! I hate the food police and when people go hating on something (similar to how they go hating on artificial sweeteners...).

    Ajinomoto is pronounced: ah-g-noh-moh-toh, with no accent on any syllable.
    The j in Japanese is pronounced j as in joker or Jill. It is not an h like Spanish.

      And even in Peru, a country that speaks Spanish, we pronounce it as 'j' not 'h' :) maybe because we used ajino moto for the longest time and cause we have a large Japanese cultural background

Russell Blaylock, a board-certified neurosurgeon and author of “Excitotoxins: The Taste that Kills” explains that MSG is an excitotoxin, meaning that it overexcites cells leading to damage or death of cells. Glutamate, the amino acid, is a neurotransmitter that works as a nerve impulse transmitter in the brain as well as other parts of the body. When MSG is consumed, our glutamate receptors can become overstimulated and can cause damage to nerve cells or heart cells and so on.

      Trust me I have read about Dr Russell Blaylock. You can find 1 person that will say anything is bad about anything, but Russell Blaylock says it about everything. You are quoting one study that was done that has been proven wrong, bad science and inconsistent with almost every other study that is out there. He is a conspiracy theorist and believes the government is out to kill you.

    love it! I cook pretty regularly and when I mentioned to a few friends that I add MSG they lost their minds. I explained to them everything you said and they finally understand but its nice to have a video to send them when they still don't believe.
    I also read that the whole MSG Causes cancer thing was started as a bit of age old racism during WWII to deter Americans from eating Asian food. Still blows me away that people don't use it more regularly.

    I recently researched MSG and came to the same conclusion as you. It is not harmful to most people and , in fact, is beneficial in lowering sodium intake when used instead of table salt. A very very small number of people are allergic to MSG ( but not as many as, to say, peanuts I think ).

    I've tried ading MSG powder to home cooked meals, and it for adds a subtle "something" that enhances the flavors, but I've found that adding mushroom seasoning powder does the job much better (and to my palette doesn't add any "mushroom" flavor, just a nice deep meaty yumminess.)

    The only reason people freak out about MSG is because we haven't given it a proper name. Like we say baking soda instead of sodium bicarbonate. People are just scared of long chemical sounding names only because they don't know what it is, call water dihydrogen monoxide and watch them freak out about it too.

      That may be the thing that started it but the reason why people belived it and belive it now is because "we don't want any gosh darn chemicals in our food" For example: How many people know what sodium cloride is if you ask them? How many of them will get mad if you tell them that it most of our food? And how many of them want to have it banned when you tell them that you can easily overdose on it and die? And when you tell them it is salt then it is suddenly fine again. People fear what they don't know, I mean what the heck is monosodium glutamate, what does it even mean? it sounds so weird it has to be bad! And I bet most of them don't even know of that article, they just got told by someone who got told by someone ect. and rolled with it without even checking, because why would my friend tell me lies?

      Cryptocurrency1607 high fructose corn syrup is really awful though. “Everything in moderation” is a weird way to think in my opinion. Why would I want to poison myself just because I know I won’t die if I don’t over do it, when I have the choice and ability to not poison myself at all? Because it tastes good?

      @@maximus4158 Why is it awful? I don't even get why it's called "high" fructose corn syrup. The most common form of it is 45% fructose and 55% glucose. That's less of a fructose ratio than table sugar, which is 50-50. And far less fructose than things like honey, which is 70%+.
      Sugar in moderation is a good thing. The only thing bad about HFCS is that it is put in everything, so it's hard to have it in moderation.

    I have Ajinomoto in mine, use it all the time! Makes things taste amazing and adds that umami kick that's needed in soups, stews and sauces. I'm actually making spaghetti and meatballs right now and added a quarter teaspoon of MSG to both the meatball mix and the tomato sauce, such an amazing enhancer.

      Everyone I mention it to always says "migraines". I use MSG, I'm also prone to migraines but don't see a correlation when I use it or eat Asian food. Americans are missing out and that may be why they add more salt and sugar to foods...

      At some point in the 80s it was also claimed it could cause cancer. At the time just about ANYTHING ‘could cause can er’...because they were feeding lab rats a thousand times more of whatever than a human would consume in their lifetime. Many of the modern ‘cancer scares’ are basically folklore that dates back to the 70s and 80s.

      That caused me a great deal of discomfort as well. But then, I have a hard time dealing with all kinds of things like that.
      For instance: "real.lit.tor" 😕 almost makes my hair stand on end. Then there's the way so many Americans seem completely unable to simply do things or instruct others to do something. They have to, "go ahead and ..." and the didn't do something, they, "went ahead and" did it. I really do hate to make a huge deal over such a seemingly little thing but I once counted 37, "go ahead ands" or "went ahead ands," in a single, 14 minute cooking video. It's maddening sometimes.

    For all the skeptics. I ordered some. It comes in little crystal slivers. Tasting it plain you get this hint of salt taste, then you get this weird umami meat taste, very similar to a chicken broth taste. Its delicious. It's taste is similar to adding a touch of bone broth to things like brocolli or noodles in a pan.

    I usually prefer using Asian brand products for cooking, but Accent is so much easier to use with the shaker container. I get this massive 3 lb container. It encourages me to use MSG more often, because it’s so easy.😅

    If your B6 is low you can have side effects to artificial sweeteners and MSG. i recommend 100 mg B6 twice daily for anyone with those issues.

    Already covered in the specific case of “ji” but Japanese is actually really easy - everything is a syllable, and everything is spelled in English phonetically, nothing is ever silent. So Ajinomoto is also A-Ji-No-Mo-To, and Nagasaki is Na-Ga-Sa-Ki. It makes more ease when written in Japanese, as the phonetic characters are a consonant+vowel pair, with the occasional lone vowel. Japanese also has a few modifiers, and when you see them you just slur them all together. So Tokyo becomes To-Kyo (slur the k-y-o together), not To-Ki-O (which is how everyone in the US says it). When in doubt, just make sure you pronounce every letter, and if you’re not sure which vowel sounds to use, they’re the same as Spanish vowels.

      My friend and I used to have a little bowl of Worcestershire sauce with our popcorn. We'd dunk the popcorn in it, hear it "sizzle" and it broke down, and eat it. Somehow we discovered this as kids. It's amazing. Dump it all over your popcorn.

    I brought some MSG a couple of days ago for the first time and did a little test with 2 small bowls of food I was cooking to see if I could tell the difference (not a blind test though) ... just with a little bit added you can really taste the difference
    Still getting used to how much to add and how it affects the amount of salt or sugar you need to add to the dish you are cooking but starting to understand what MSG adds and how to use it
    I've been adding marmite to my homemade vegan sausages for the last few times I've made them and it is an improvement to the savory flavour but you cant add much or the flavour overpowers everything else (unless you are going for marmite sausages lol) I'm going to try a mix of MSG and mushroom powder and see if that is better

    MSG already existed most of our food and the powdered MSG it’s just grounded up Food is turned into a powder, similar to seasonings which are just ground up peppers, Garlic, onions, and other vegetables that are grounded up into a powder.
    There’s no such thing as natural ingredients or unnatural ingredients, because there are chemicals in both of them, which are both harmless .

    Thank you for the lesson in MSG. I had hear the stories about MSG 30 yrs ago. And tried to make sure I had none in my food. I want to do this test myself. Not to disprove your findings, but to find out what I have been missing most of my adult life. I'm really looking forward to this test too. All my cooking has always been about flavor and nutrition.     I’m getting my first batch of MSG today. I see that you did an experiment where you used MSG as a replacement for salt and MSG was superior which I’m not surprised by that result. I’ve been told that I eat way too much salt, i’m just wondering whether it will be dangerous for me to make all the same recipes I have in the past but replace MSG for salt… What do you think? I am not one of those people who thinks that MSG is toxic or unsafe, but I’m just wondering if I eat that much MSG to replace my love for salt, if you think it might be as dangerous or even more dangerous than a high salt concentration in my diet…
    I was thinking that if I replaced MSG with salt I would get my sodium levels down very fast and be healthier… I think you see what I’m getting at here… I’d love to hear your thoughts on this… Thank you my friend!

      I'm not an expert, but if MSG has 1/3 the sodium that salt has, then substituting salt with MSG would mean that over the course of your lifetime you would consume 2/3 less sodium, which sounds much healthier than if you used salt.

      @@metalvideos1961 I think you're confused about something here. Stevia is a sugar alternative. Msg and stevia provide entirely different flavors. And I also think you may have misinterpreted the point of the msg explanation. It's perfectly healthy to eat. It's like salt in that is totally okay for consumption, just don't consume it in excess.

    I've been cooking since I was 12 yo and been using MSG. I'm 26 now and the only thing I got it's my new super power to recognize which food doesn't have MSG. Literally.

    My wife just bought a container of it and i had to dip a finger and try it.....wow. It starts off tasting like nothing, extremely subtle and then as it spreads through your mouth you get that "Umami" flavor profile that develops. Not mushroomy, but kind of earthy and deep and you immediately scratch that itch you get for the savory Chinese food flavors you could never reproduce at home. Awesome stuff.

    Protip: when using MSG (or cooking with ingredients naturally rich in glutamate like tomatoes, mushrooms, soy sauce, etc.), try to find a way to incorporate fish sauce. While it's not going to help with reducing the sodium content of the dish (QUITE the opposite), fish sauce contains synergistic nucleotides which will increase the sensitivity of a tongue to the sensation of glutamic acid; ie: including fish sauce will make the tongue eating the food taste even more umami.
