    Beef Dasida has become a staple ingredient in my kitchen....even in my non korean dishes and soups. I'm a southern American, and that powder does something magical to A LOT of traditional southern dishes. I also love making southern/Korean fusion dishes. The most incredible fusion dish I make often is kimchi collard greens. I could literally drink the broth (a.k.a "pot liquor") from the kimchi collard greens because it is soooo good and addictive! I live in a rural area in Western North Carolina, and we don't have a "korean" market anywhere even remotely close but I do drive the hour to Asheville just to go to the little Asian market to get most of my ingredients. They sell all kinds of Asian staples and not only are the prices much cheaper than getting it off of Amazon, I feel like my money is spent better helping their small business. The elderly Korean couple that owns it are soooo sweet, and the last time I went the woman actually gave me a jar of her homemade kimchi for free, to try. It was the best kimchi I'd ever had, and only lasted 3 days in my house because my whole family just put it on EVERYTHING. These little markets in small towns are definitely worth supporting, and I'm so glad you push people to shop at these kinds of markets instead of giving Amazon more money.

    The BEST garaetteok I've had was this handmade one by a Korean bakery. This guy's tteok was way better than the kind from the grocery store!
    Also, vegan friend here 🌱👋🏻 While vegan sausage works, I've used it too and it's great when pan fried first, my favorite is fried tofu/aburaage. The kind for inarizushi! It's that flat sorta spongy texture, even if it's not really seafood-y. (Maybe you could quickly boil it in kelp broth?)

    • @ModernPepper
      @ModernPepper  3 года назад +1

      Hi Jessica H! Using inarizushi in place of fish cakes is a great idea👍. In Korean, the fried tofu wrap is called DuBuYuBu 두부유부.
      I would just quickly rinse it under hot running water a few seconds to rinse off the excess oil on it.
      I have a Vegan "fish" sauce recipe, included in my Vegan Kimchi recipe. You can use this vegan 'fish' sauce as your base for the tteokbokki broth or any broth.

    I’ve had this dish many times in restaurants. When I cook food myself - like the way I cook japchae now - it’s always better than the restaurant. This recipe sadly didn’t work out for me. I boiled 4 cups of water as stated. It was soup. I think 2 cups would have made the proper sauce. My sauce was not reduced as in the video, though I followed the timing and ingredients to a t. It was good soup though.

    Instead of adding cabbage and carrot separately, could you just add a small can of kimchi instead? Also, for mild spiciniess, can you add a mix of Kashmiri chilli powder and paprika for color?

    • @ModernPepper
      @ModernPepper  6 месяцев назад

      Hi 👋 You can add whatever you want and see if you like it. But Kashmiri and paprika have distinct flavors that will result in a completely different taste. These chili powders taste totally different from Korean red pepper flakes (GoChuGaRu). As for adding canned kimchi, if you like it, give it a try. BUT kimchi is not added to Tteokbokki. FYI - Canned kimchi is the least tastiest. We, Koreans, eat canned kimchi only in emergency situations.

      Hmm…hopefully u can find a brand that makes it alcohol free. I would use both the coarse and fine ground Korean red pepper flakes and mix it up with some DoenJang/soybean paste (halal) and soy sauce. Mix it up and try that instead of the recommend amount of the GoChuJang used in the recipe.
      BUT if u want to make it extra yummy, make this seasoning paste (minus the GoChuJang) and let it ferment for a week at least (the longer it ferments in the fridge, the tastier it gets). I keep it for months in the fridge.
