    That’s a gorgeous tenderloin! Really nice breakdown on the different cuts that come from it. The stuffed roll sounds great and apparently I have a denuded head, who knew. 😁 Have a great weekend Dougie!

    Hi
    Chateaubriand is the big end part of the tender loin like you said. It does not mean « for two ». It comes from the name of « François-René, vicomte de Chateaubriand ». Legend says it is his chef who invented the recipe witch was a little different then.
