A little Peruvian secret, toast a teaspoon of garlick paste before adding the rice, then cook the rice like you did on step 1 so when you add the salt and water it has a toasty garlicky flavor to it, it makes a huge difference and we love it here.
Garlic taste may be a quite strong flavor in many western countries, so it is not to expect that it will be acceptable, at least immediately. They may give it a try, but plain white long grain rice cooked with water and salt is fine for not Peruvians.

Rice is so versatile! I learned how South Americans cook rice, which is similar to what you did. In Panama, and other countries (mostly in the islands) we cook it differently but the result is the same, sort of. We toast the rice on oil, butter or a combination of both, and sometimes we add fresh garlic at that point, then we add water until it boils, and when it does we cover it and lower the the heat to the lowest setting until the water evaporates. I LOVE lomo saltado! I don't have a fryolator so I buy steak fries from a restaurant and do everything else at home ;) Lomo saltado y ceviche con leche de tigre! Nothing better, long live the Peruvian cuisine! Much love from Panama.
Its'n necessary a fryolator. All you've to do is add a few of oil on a common frying pan. And as time goes by, add the rest of the ingredients in any order (except the meat XD).

There is a Peruvian chain restaurant in NC called Alpaca that makes it with steak or chicken and it comes with green sauce and white sauce on the side, very tasty
Yeah, the name is 'lomo saltado' which as the video says, it is made with beef, but you can make 'pollo saltado' which is a variation of the dish with chicken instead of beef, and you can make a lot of variations. I have eaten stir fry with turkey
As a Peruvian, I was ready to criticize a few choices in this recipe, such as the bell peppers and green onion for being non-traditional (in my experience). I'm so glad I took the time to watch and better understand why you made those choices. While it may not be exactly how I make it, I think this is a solid version! @@johnstewart5221 Change the white vinegar for red wine vinegar, aji amarillo instead of the bell pepper/jalapeño (if can get it; improvise if not as in the video) and drop the oregano. That's about it on the ingredient side. Give it a little more time mixing all the ingredients in the pan at the end before plating (which would mean cooking the meat a little bit less in the first step so it finishes cooking with the carryover and in the final stage). Bear in mind that this is a juicy dish, so the serving should include a lot of the juice (which should not be too liquid). Letting the fries and rice soak in that juice is just a touch of magic.

Pero algunos prefieren dorar unos ajos en el aceite que usaras para el arroz, le da otro sabor. Y en vez de cilantro usan perejil o un poco de oregano. Hay muchas varientes de este plato. Suerte.
I'm Peruvian an you did an impeccable recreation of the dish. The only thing is that the rice has garlic you brown it with a little oil and then add the rice to toast it and you added waaay to much garlic to the vegetables.

As a peruvian,restaurants in Peru serve the dish as you did, but traditionally we serve the potatoes mixed with the meat. Having them separatedly is a new fad started (i guess) in high end restaurants and now many are doing it as well. The experience is totally different because the juices of the stir fry enter the potatoes adding flavour. You can try it once and compare and decide which you like most
También le puedes agregar al servir, el concentrado con el que terminaste de cocer la carne, en eso está todo el sabor con el que se debe mojar la carne para que tenga más gusto. Como ingrediente adicional, cuando tengas listo todo el lomo para servir, 2 minutos antes agrega perejil picado y tapa lo que tengas para que le de frescura, luego ya sirves el plato.

This is the best preparation of Lomo Saltado I've seen on the internet. So many people get it wrong, but you sir, got it down perfectly. A recommendation, taste wise, the closest thing I've tried to Aji Amarillo in the US is the green Anaheim Pepper. You can also use it for Huancaína Sauce, it just won't look the part.
As a Peruvian, I've cooked it so many times, that I began to skip some steps. So that, I've stopped being careful with the quality of the potatoes and meat; at the cost of cooking it in times of 15'. If any ask me, the way you prepare it's like in a nice local restaurant. Thanks a lot for that dish, because I going to reconsiderate some steps and be carefully

Having them separatedly is a new fad started (i guess) in high end restaurants and now many are doing it as well. The experience is totally different because the juices of the stir fry enter the potatoes adding flavour. You can try it once and compare and decide which you like most

Mi favorite platillo desde que los descubri en un restaurante en San Mateo California. Machu Pichu, Espero que lo descubran.
También le puedes agregar al servir, el concentrado con el que terminaste de cocer la carne, en eso está todo el sabor con el que se debe mojar la carne para que tenga más gusto. Como ingrediente adicional, cuando tengas listo todo el lomo para servir, 2 minutos antes agrega perejil picado y tapa lo que tengas para que le de frescura, luego ya sirves el plato.

This is the best preparation of Lomo Saltado I've seen on the internet. So many people get it wrong, but you sir, got it down perfectly. A recommendation, taste wise, the closest thing I've tried to Aji Amarillo in the US is the green Anaheim Pepper. You can also use it for Huancaína Sauce, it just won't look the part.
As a Peruvian, I've cooked it so many times, that I began to skip some steps. So that, I've stopped being careful with the quality of the potatoes and meat; at the cost of cooking it in times of 15'. If any ask me, the way you prepare it's like in a nice local restaurant. Thanks a lot for that dish, because I going to reconsiderate some steps and be carefully
