This step helps the bottom & sides to be browned perfectly, which helps hold the pieces together after cutting. I also cut pie shaped slices immediately after removing from the oven & run the spatula under the pieces to loosen. Then I let it rest for about 5 minutes. Perfect every time! I made cornbread without sugar from scratch like my grandmother yesterday and it was the bomb. There are a lot of people that like sweet cornbread and put sugar in theirs. I am with you. Once you add sugar it is a corn muffin, not corn bread. The one thing that burns my rear end is no restaurant in Chicago serves corn bread without sugar.

Growing up my mom melted butter in her pan while mixing the batter. That is how she greased the pan and she would pour the rest in the batter. You could see a ribbon of butter throughout the batter! And put me down for sweet cornbread- just a tad sugar!

i followed your recipe AB, i just substitued the 1/4 cup of oil for a little more than 1/2 stick of melted butter. I did add 1/3 cup of sugar and it came out perfect. not too sweet, just right. i made some cornbread for thanksgiving but this one is way better. def going to be making this often.
I'm a Texan, born, raised and bred and I love my cornbread SWEET! Especially when I pour my homemade chili over it in the winter or serve it with my black-eyed peas and southern cabbage for New Year's! Nothing quite like the sweet of the cornbread to contrast the savory of the other food! 😋🤤

No sugar for me in West Texas. Bacon grease in the cast iron skillet on the stove burner, let it get hot enough to sizzle when you pour in the batter, and give the cornbread a beautiful golden, crispy crust then into the hot oven. Then slather it with butter and watch the butter drip on your fingers as you take that first delicious, crispy bite! Man, I LOVE cornbread! Red beans, fried potatoes & cornbread! Cornbread crumbled in a glass of cold "sweet milk" ( as opposed to buttermilk. ) eaten with a spoon! Cornbread goes with anything. 😆 🍽🥛

I'm southern, and was born and raised in Texas. My Mom would put butter in a cast iron skillet and place it in the oven while she mixed a package of Jiffy. Then she'd pour the batter into the skillet and bake til light golden brown. I follow her lead with the butter in the skillet, but I make my cornbread 🌽 from scratch. I also don't overmix my batter and it comes out moist and fluffy everytime!! I add a 1/4 cup of sugar to the batter, unless I'm making dressing where I omit the sugar.

Usually I use sugar. However, when I’m making cornbread for dressing, I use a very minimal amount. I also use a minimum amount when making Mexican cornbread. Otherwise, I like sweet cornbread. One thing I’ve never heard before is to whisk it until it’s smooth. I always thought a few lumps was fine and not to stir til it’s smooth. Live and learn!
@wiz marley have made homemade dressing for 35 yrs and never used sugar .and my dressing is number one on the family list for the family .But nothing happens next time I make it I will try sugar and see if anyone notices the difference.Thank you.

I grew up eating cornbread without sugar cause that's the way my grandmother made it, but as I got older and started making it myself. I use bacon fat, buttermilk and I put sugar in it not so much that it's overly sweet. After it's done I put a honey butter glaze on top.

I like it both sweet and unsweetened depending on what I'm eating it with. Definitely no sugar when eating it with collards, but sweet corn bread is a must with BBQ beef ribs. At any rate, I've drastically changed my eating habits so I pretty much have cornbread once a year, if that.

Disagrees. That's how I grew up making cornbread, with a splash of sugar. I'm from the South, the dirty south. We can make it in the oven or on the stovetop. Either way, that's how I was taught with all the same ingredients..
My wife says adding sugar to any corn bread turns it into cake instead. And the cast iron skillet is heated in the oven before pouring the batter in it
I put sugar on my beans/peas and mix a pancake in with it. I've been doing it since I was a kid. My favorite bean is pinto beans. That cornbread mixed up with some black eyed peas would really hit the spot AB. 🕊️
I grew up in the South and my family didn't put sugar in cornbread, but when we moved up North, everybody put sugar in their cornbread - Jiffy-World! Also, I grew up on cornbread made from white cornmeal, not yellow cornmeal, so yellow cornbread looks funny to me. I use the Aunt Jemima Buttermilk White Corn Meal Mix or Martha White White Cornbread & Muffin Mix. Southern-style cornbread should not be sweet!

Usually I use sugar. However, when I’m making cornbread for dressing, I use a very minimal amount. I also use a minimum amount when making Mexican cornbread. Otherwise, I like sweet cornbread. One thing I’ve never heard before is to whisk it until it’s smooth. I always thought a few lumps was fine and not to stir til it’s smooth. Live and learn!

@wiz marley have made homemade dressing for 35 yrs and never used sugar .and my dressing is number one on the family list for the family .But nothing happens next time I make it I will try sugar and see if anyone notices the difference.Thank you.
@@SmokinandGrillinwithAByes! I love the sweet and savory flavor sweet cornbread gives dressing, but this year I'm going to try it with just 1 or 2 tablespoons of sugar. I think it'll still be good.

I grew up eating Jiffy, so I guess I like the sugar taste. My sister makes what she calls friendship cornbread. She puts cinnamon and sugar, I think, 🤔 and it's delicious 😁
Wow, that does sound good. I put and extra egg and honey in my Jiffy mix, which, I to grew up on.

Love me some home made cornbread but over the years, I've gotten into the habit of roasting, peeling, and dicing a couple of jalapeno peppers to add to the mixture.
And yes, I like a bit of sweetness to my cornbread.

In Texas, I learned to add a small can of creamed corn to moisten it up a bit.
I found your channel yesterday and I am so thankful that I did. This is the first cornbread recipe that has ever turned out right for me. My family went crazy over it last night. I will never use another recipe ever. I thought it was against every recipe law not to add sugar to cornbread. Thank you again for this recipe.
I grew up eating cornbread without sugar cause that's the way my grandmother made it, but as I got older and started making it myself. I use bacon fat, buttermilk and I put sugar in it not so much that it's overly sweet. After it's done I put a honey butter glaze on top.

Ugh. That ain't cornbread that's cake. Born and raised in the south. Mom and wife so southern it's a blessing. No sugar, ever. But to each his own. We had my wife/Mom's cornbread, greens and black eyed peas New Year and it was awesome. Thanks for your vids my friend.
Yes on the sugar. Also preheat your oven with the cast iron and oil. When you pour the batter in it starts cooking immediately.

I like it both sweet and unsweetened depending on what I'm eating it with. Definitely no sugar when eating it with collards, but sweet corn bread is a must with BBQ beef ribs. At any rate, I've drastically changed my eating habits so I pretty much have cornbread once a year, if that.

Disagrees. That's how I grew up making cornbread, with a splash of sugar. I'm from the South, the dirty south. We can make it in the oven or on the stovetop. Either way, that's how I was taught with all the same ingredients..

I put sugar on my beans/peas and mix a pancake in with it. I've been doing it since I was a kid. My favorite bean is pinto beans. That cornbread mixed up with some black eyed peas would really hit the spot AB. 🕊️

I grew up in the South and my family didn't put sugar in cornbread, but when we moved up North, everybody put sugar in their cornbread - Jiffy-World! Also, I grew up on cornbread made from white cornmeal, not yellow cornmeal, so yellow cornbread looks funny to me. I use the Aunt Jemima Buttermilk White Corn Meal Mix or Martha White White Cornbread & Muffin Mix. Southern-style cornbread should not be sweet!
White cornmeal!! Yes, my Sista!!! Grew up eating cornbread made in a cast iron skillet made with white cornmeal… hot water corn bread was made with white cornmeal, too!

The only step I see that ya missed was letting the batter sit at room temp for 30 minutes before putting it in the oven

Hello AB! I used the Jiffy mix and didn’t have any regular milk. I only had Almond milk and used that. I tell you, it wasn’t bad at all to me. But I am going to try it your way making it from scratch. That’s the best way. Thank You AB for sharing this great video!!
