so glad you love filipino food lisa! longganisa's my favorite breakfast staple - and it actually has a lot of variations, from the garlicky Vigan longganisa to the European-influenced Lucban variant and the Tuguegarao/Ybanag longganisa that most of the time uses carabao meat and has atsuete/annatto in it. i hope you can try them all someday!
You can try this one famous Filipino soup called ‘Sinigang’, Lisa! The soup broth is made from tamarind powder or paste and it is mixed with pork/beef, okra, radish, tomatoes, and other vegetables. It is the *perfect* combination of sour, savory and fatty flavours-perfect for cold, rainy days!
When you go to the Philippines, there is a shop in Baguio called The Good Shepherd and their ube spread is soooo good! They have a lot of stuffs there too. Tourists always go there for the souvenirs and food and the ube spread is always the star! 🤩😋

You should try kare kare and sinigang too! Nothing gets more filipino than that haha but mostly these two dishes are often underrated and never get exposure but they're 2 of the bests imo

Usually we actually make sisig out of the ear of the pork's head but pork belly works just fine. Although I'm curious to why they garnish the pancit with lemon when it's usually calamansi.
