Lomo Saltado is my fav, but yes the Tallarín Verde or the Papa Rellena is delicious. The Papa or Yuca a la Huancaina is classic and tasty. Another favorite is Cancha!

FR that food is dank, the kind of food you take your really good friends to, afterwards have a sopapilla, it's fried tort that puffs up like a pillow and then has ice cream inside, it's perfect.
We need more food diversity in Mexican restaurants that are in the states. Seeing someone eat mole, tamales veracruzanos, Pollo en achiote, pollo en crema chipotle, sopes, gorditas, menudo, pozole, entomatadas, enfrijoladas, pachucos, enchiladas, camarones a la diabla, nopales en salsa roja, chicharrón prensado, or costillas en salsa verde would be a breath of fresh air. Mexico is so much more than tacos
How about another challenge??!! Hihihihi the chalenge would be "inside kitchen's" the theme could go around being with chefs, being inside their kitchen explaining and teaching their stories, their backgrounds and their ideas of life and the journey that they had around food, what food they bring, where does it come from. It would be cool, i mean it would be like anthony bourdain show...kind of loool i think it would be lots of fun knowing the background of restaurants!!! 👍

Mexican here! I'm from Guadalajara, Jalisco and Fernanda is right! Quesabirria (birria in general) it's a big thing here 😁 we're also know for "Tacos de barbacoa", it's similar to birria but is cooked normally in a pot instead of using "penca de maguey" (maguey leaf). We can eat it twice a week if we want 😆
