Making Salt & Straw Salted Malted Chocolate Chip Cookie Dough | Top 10 Ice Cream

- This Salt & Straw ice cream has gone right in to our "Top 10 best ice creams", we'll be adding more to the Top 10 so keep an eye out ;)
It's such a mouthful to say but my word, it is worth saying.
So what will you need to make this?
Ice Cream Ingredients:
100g Sugar
2 Tbsp Milk Powder
½ Tsp Salt
¼ Tsp Xanthan Gum
320ml Whole Milk
2 Tbsp Light Corn Syrup (Glucose in UK)
1 Tsp Molasses (Black Treacle in UK)
320ml Heavy (Double) Cream
2 Tsp Vanilla Extract
Cookie Dough:
60g Unsalted Butter at room temperature
2 Tbsp Sugar
55g Brown Sugar or Muscovardo Sugar
1 Tsp Salt
2 Tbsp Heavy (Double) Cream
1 Tsp Molasses
1 Tbsp Corn Syrup (Golden Syrup in UK)
1 Tsp Vanilla Extract
60g All-purpose Flour (Plain in UK) baked at 350°F (180°C) for 10 minutes
2 Tbsp Malt Powder
45g Semi-sweet Chocolate chips
Malted Fudge:
1 Tbsp Cold Water
2 Tsp Malt Powder
110g Corn Syrup
120ml Heavy Cream
1 Tbsp Unsalted Butter
⅛ Tsp Kosher Salt
1 Tbsp Cocoa Powder
85g of 80% Chocolate chopped

Great video. But when I read their labels it doesnt say anything about xanthum gum and dont you need egg to emulsify? Thanks.
Hi Steve,
You are correct if you look on a pint label, these recipes are for making at home using home machines. Tyler Malek from Salt & Straw created this version and posted it to Tasty almost 3 years ago now so people like you and I can make it at home. There are many ways to emulsify a recipe but in a base like this additional emulsifyers are simply not required. Give it a try, you won't be dissapointed.
If you don't want to use xanthan gum, you can sub it for gelatin or your chosen stabiliser of choice. To be honest, you can leave it out completely and it won't effect the result too much.

Hi. The ice cream is amazing! Super flavour and texture, a real game changer! I added 3 tsps vanilla paste and boom...perfect ice cream. Well, almost...I found there were fat globules in the finished ice cream (tiny soft lumps) and im not sure what I did wrong? Any help on this would be appreciated.
Hi Steve, it’s an amazing combo isn’t it. As for the fat lumps, I’m going to ask what machine you’re using and how long did the churn take?
Myself and some good friends and pro ice cream makers can only put it down to ingredients and churn speed/ time. Over churning can produce lumps of fat so that might be what’s happened for you. It could also be too high fat but I’ve made ice cream at 25% fat content and had no issues at all.
@@PolarIceCreamery Thanks for your reply. Im using quite a cheap Andrew James Ice Cream Machine but I dont seem to get the issue if I use an egg or two in the recipe which I guess helps emulsify the mix. But I want to keep using this recipe because its a cleaner taste. The overchurning could well be the culprit...
I think Im going to have to be more careful when Im not adding egg to emulsify. And also ill invest in a stick blender. I'll give it another go...amazing ice cream tho.

Is it possible to replace xanthan gum with another ingredient
Guar gum, or just leave it out.

Bc guar gum is very difficult to find
@@antonionicolas6684if you can get Xanthan gum or Guar gum, you won’t be able to get any other stabilizer. There is no replacement for stabilizers. The texture will be similar but it won’t keep as long etc

Nicely done - the flavour didn't sound too exciting to me as I don't know what malt is and don't like cookie dough, but I'm tempted after your review. If you're looking for another Salt and Straw recipe to try, check out their Halloween specials. I tried the Amortentia icrcream and it has some unusual ingredients, but still doable with substitutes and fun to make and eat all around.

I don’t really love cookie dough but this combo really works, definitely worth trying if you can.
