As long as you’re willing to stick around on an older version of macOS it’s perfectly fine. The price to performance ratio for pc parts is still better. Also if you need PCIE devices you basically don’t have much choice between 2019 Mac Pro or a hackintosh.
I have ordered a new laptop, and I was thinking of trying to repurpose my old Intel laptop (Toshiba with i7 4700mq with intel graphics 4600) .. Is this hardware too old? I dont really care about perfect performance, I just want to dabble with some MIDI and audio software..

Yes that’s true, I know a lot of music producers sticking to hackintosh because of that.
