Cream Cheese Icing | Creamy and Delectable!!

  • Welcome to 2-Minute Tuesdays tutorial on my Cream Cheese Icing. This icing has a 2:1 ratio of cream cheese to butter so it's extra tangy with that classic cream cheese flavour that you want out of an icing. I hope you enjoy it! All recipes in metric and US measurements.
    **RECIPES & METHOD BELOW**

    RECIPE
    250g (1 cup) butter, room temp
    500g (2 Cups) cream cheese
    1500g (12 cups) icing sugar (confectioners or powdered sugar)
    5g (1teaspoon) Vanilla essence or extract
    10g (2teaspoons) Salt
    METHOD
    Cream the butter and the salt for 1-2minutes. You want to get the butter loosened up and put a little air into it. That way it wont be lumpy when you add your cream cheese to the mixer. Scrape down your butter mixture.
    Add cream cheese and mix on high until light and fully combined. (2-5 min).
    Scrape down your butter/cream cheese mixture.
    Add your icing sugar 3 cups at a time and start mixer on low increasing speed gradually, otherwise, your kitchen will explode with white powder!
    Scrape down after every few additions to ensure everything is fully mixed.
    Add your vanilla and mix in.
    This is enough to ice a 3-layer x 9" round cake. Use to ice your carrot cakes, hummingbird cakes, lemon pound cakes or anything you like because it's just down right delicious!

    Jillian, you are so cute, I just love ya'! You are so much fun! Thanks again for another hit. I LOVE this type of frosting and use it more often than buttercream. People always comment on it. Do you recommend keeping the finished product be kept in the fridge and how many days is this ok? Also, is there a place where your recipes can be printed off?       Hi Deb! Thank You for your feedback, it's heart warming!
      - The cream cheese icing can be stored in the fridge for up to 7 days in an air-tight container.
      - At this point in time I don't have a place for printable recipes, you'll need to copy /paste them into a word doc from my comments field. But I've got a bake book coming out by this time next year and it will have all of my recipes in there!
      Oh, and I've been to Iowa before (Fort Madison on a prop plane, believe it or not!) and also have a good friend who comes from Iowa! Went there in a snow storm at Christmas time. Was beautiful up there.
