- Happy Songkran 2021! In this video we share a quick update on the current situation in Thailand now and Ao Nang in Krabi Thailand, over a family dinner of Thai hot pot (jim jum) at home. Stick around to the end of the video for some previously unseen footage from Songkran 2018 in Ao Nang to put some smiles on your faces. Fingers crossed we'll have a Songkran like that again soon!

The recipe for the Thai hot pot (Jim jum) in the video is-
For the Meat-
250 grams of meat sliced into roughly 2mm thick pieces (You can use any meat or seafood of your choice. If you are using seafood you do not need to marinade it, but you can if you wish).
3 tbspn oyster sauce
½ tbspn soy sauce
1½ tspn sugar
1 tspn sesame seeds
1 egg
1) Mix the oyster sauce, soy sauce, sugar and sesame seeds and marinade the meat for 20 minutes (or longer if you wish).
2) Break the egg over the meat and mix through just prior to cooking.
For the Broth-
1 L water
10 slices daikon (roughly 4mm thick)
2 lemongrass stems, cut into thirds
4 leaves kaffir lime, torn into quarters
5 slices galangal (roughly 2mm thick)
2 shallots, crushed
5 chilies (or as many as is to your taste), crushed
20 leaves Thai sweet basil
3 tbspn oyster sauce
2 tbspn fish sauce
1 tspn salt
1) In a pot add the daikon to the water and bring to the boil, then reduce and simmer till the daikon turns clear.
2) Add the oyster sauce, fish sauce, salt, lemongrass, kaffir lime, galangal, shallots, chilies, and Thai sweet basil.
3) Bring to boil again and simmer for 5 minutes. The broth is now ready to add to the hot pot.
Other Ingredients -
Glass noodles
Additional Thai sweet basil
Vegetables: You can use any mild flavoured vegetables of your choice, in the video we used Chinese cabbage, bok choy, Chinese morning glory and moon flowers. Some other suggestions include Asian mushrooms, other Asian greens, sliced carrot, and spinach.
1) Add the broth to the hot pot, cover and bring to the boil.
2) Add the meat and seafood and then top with vegetables, then glass noodles and finally Thai sweet basil.
3) Ensure everything is submerged in the broth and then cover for 3 - 4 minutes (till done).
4) Serve with Thai suki dipping sauce (Optional - available from Asian grocery stores and online shops).
5) Enjoy 😊

What a beautiful presentation of food Orn has made, we get the same Pantai suki sauce from our local asian store...it is so addictive.
My mother in law is in Ban dung (Nong Khai), she said it has been very warm and humid.

Ain't no bars open to walk between in Thailand currently, and restaurants must close by 9pm in many areas. In lots of areas there is no dining in anyway. We reached another record high in new Covid cases today. Every other day is a new high now. Things are not looking real good here.
Yes, I have seen what is happening in the UK. I have a number of friends there and I read it in the news too.

Yes, we're ok, thanks, and we are doing our best to keep it that way. I hope you're doing well too.
Unfortunately there is a lot of Covid here in Krabi where we live, and we are doing what we can to ensure we stay safe. Many people I know have had Covid here now and someone I knew died from Covid here recently 😞
Restaurants have had restrictions on dining in for some time, many vendors are not going to the markets, there is no eating at the markets where we live, and there are also added restrictions for travel within Thailand. It is not a good time for us to be out and about trying to make the kind of videos we make. I am focused on keeping my family safe right now.
Sadly Aorn and I are both really busy with work too. I work 5 days a week from home, while Aorn has been taking care of Ananda and homeschooling him because his school has been closed since May. Aorn works on the weekends and I take care of Ananda then.
We plan to be making more when it is safe for us to do so and our schedules allow.

I hope that table is sturdy. The cooking pots look heavy, and that water is boiling away at chest height.
Yes, it's a sturdy table, they're used in local restaurants all over Thailand, and the cooking pots are not as heavy as they look (about 4.2kg all up). We've been doing it like this for quite a few years and so far so good :)
I didn't think it was safe to have raw pork, prawns, liver, etc all soaking together? But hey, your still alive (at time of posting) 🤣
