My First Time Canning Tomato Sauce!

  • Today Ashlyn ran the show! We always start our mornings taking care of and feeding the animals. Today we had a treat for the chickens, they got to carve their very own Pumpkin for Halloween! Then we spent the rest of the day processing our tomatoes and canning the tomato sauce! We are so excited to have more canned goods in our pantry!

    I love how there are so many ways to process tomatoes. I grow Romas because they have less seeds. My husband cant have seeds or nuts. As I pull ripened tomatoes, I puree them then strain the liquid through a sieve then freeze. Once all the tomatoes are done for the season, I defrost the bags and add the liquid to a huge stock pot. Cook for a couple hours to reduce the liquid, add tomato paste (going to try to make my own in 2024) and seasonings to taste then can them. It is so satisfying to see how many jars you put up. I love it! Thanks for sharing.

      That’s wonderful! We didn’t end up adding any seasoning, basil or garlic in our jars. Just canned the tomatoes sauce. We will add which ever spices and herbs we’d like at the cooking stage!

    I keep the tomato water I drail and can that as tomato juice aswel! Its great for flavor in making rice :)

    Dry those skins, makes awesome tomatoe powder! I add to stews, soups, chili..

    Something I learned a few years ago is to use a laddle to remove the extra liquid while the tomatoes are heating and fill quart jars with the liquid and then can. It is runnier than regular tomato juice but is great for adding to soups. Great job, Ashlyn! Your garden will keep you busy canning all your wonderful veggis.😊

    Ashlyn, you made canning look easy. And I would have never guessed that lemon juice went in. It makes me want to try it. I always thought everything had to go into a pressure cooker. I love watching you and Zach. I'm old learning from the young. God is so good. He always knows who to put into my life. ❣️

    You are very lucky not having explosions.
    Need to leave 1 inch headspace on jars. Also need to put liner on regular pot so glass jars do not rattle and explode, even a towel on bottom of pot can help.
    Good job and learning how to can properly will save you extra work. 👍

    Do y’all have a freeze dryer yet? If you do save the skins freeze dry them & turn into a powder. When you need tomato paste add a little bit of water to a couple tablespoons it makes wonderful tomato paste. If you don’t have 1 they are have a Black Friday sale with $500 off.     I'm sure you are going to get a lot of advice on canning. Here's my 2 cents worth. You don't have to waste the money on air tight bags, they can go in any bag. I see you didn't run your sauce through a sieve for all those seeds. You still can when you open them. You guys are doing a great job of learning how to homestead.

    Ashlyn, Well done canning all those beautiful tomatoes! Just add a small towel in bottom of canning pots add water, then jars. It stops rattling and potential of cracking jars! Ok I have to ask Zach what's the deal with ALL the tattoos, I keep seeing more and more?? Take Care

    Hello Zach and Ashlyn! I'm sure that we as fans of the channel are about to see the two of you take this RUclips bull by the Horns 🤘. Even if I was wrong nearly a year ago after watching your first episode. I believed then that there was something good about the channel and could see the great potential of success on RUclips and for most of the channels that I currently follow which may have had a few hundred views! I just had a idea that there was something special in the same way that I got that sense from you guys, now the majority of them are getting upwards of 50k views within the first couple of hours. I think that Zach and Ashlyn have that very same potential if not greater. Hang in there.

    One of the RUclipsrs I watch puts a dishtowel at the bottom of the canning pots so that the glass jars are not up against the hot pot and they don't jiggle around so much, which could make a jar break.

    Hey little lady! Good job! I have been canning forever and it never gets old. You’re right about it being satisfying. I love watching the pantry shelves fill up over the summer and fall months. I only have one acre but the amount of food I can get is wild. I don’t have animals but I do have honey bees. I love those little critters. They are so incredibly interesting. Don’t you just love not having to buy everything from the store? Just subscribed ❤

      No we didn’t. We like to add our herbs and garlic when we are actually cooking. It gives the dish a much stronger flavor.
