How To Make Traditional Irish Soda Farls

  • In this video, I show you how to make traditional Irish Soda Farls. This recipe was passed down to me by my mother who still makes soda farls today. You can use Soda flour on its own instead of plain flour and baking soda. When ready, remove from the pan and wrap in a clean tea towel.
    Soda farls taste delicious simply spread with some local Northern Irish butter. Or you could add jam or a savoury topping to your liking.
    A farl is made by cutting your dough into four and cooked on top of a griddle. Soda farls are naturally low in saturated fat and low in cholesterol.
    Traditional Irish Soda Farls Recipe:
    Ingredients:
    10 oz plain flour
    1 level teaspoon baking soda (too much turns the bread yellow)
    Pinch of salt
    Approximately ¼ - ½ pint buttermilk
    Makes 4 Soda Farls
    Method:
    1. Sieve the flour and baking soda into a large bowl.
    2. Add salt and aerate well with hands.
    3. Make a well in the centre and add most of the buttermilk and mix in with your hand.
    4. Add enough milk to make a soft dough (almost wet). Turn out onto a well floured surface.
    5. Knead very lightly (without applying pressure) into a round shape.
    6. Press down to flatten a little and then cut into four.
    7. Meanwhile heat the pan on a gentle heat and dust with flour, when the flour starts to colour the pan is hot enough.
    8. Place the farls on the pan and cook on a gentle heat until nicely coloured on one side, then turn over and cook until coloured on the other side. It will take about 15 minutes on each side.
    9. Prop the farls on their sides to cook the sides a little.
    10. Then remove from the pan and wrap in a clean tea towel.
    Notes on making Irish Soda Farls:
    You can use Soda flour on its own instead of plain flour and baking soda.
    Cream of tartar is an acid and reacts with bicarbonate of soda to raise a mixture.
    Bicarbonate of soda is an alkali and reacts with an acid (buttermilk or lemon juice) to raise a mixture.
    Baking powder is a combination of cream of tartar and bicarbonate of soda and some other base flour (rice or corn flour) which reacts with moisture (milk or eggs) to raise a mixture. So when making a cake it is essential to put it immediately into a hot oven.
