    A poem by Luis Pales Matos
    “You are, in pirate and black,
    my stylized green island,
    black gives you the shadow,
    the pirate gives you the line.
    Drum and arquebus at the same time
    your brunette glorai exalt,
    with red flowers of gunpowder
    and brave rhythms of bamboo.
    When the hurricane unfolds
    its fierce accordion of gusts,
    on the tips of its feet
    agile bayadera dances
    on the carpet of the sea
    with a fine leg of palms.
    You could wear a mantilla,
    if your fiery ñáñiga blood didn't
    exchange the slight foam of Spain
    for madras.
    You could look, slender,
    sobriety of classic line,
    if your sun, by dint of gold,
    did not mature your amphorae
    dilating their contours
    in the amplitude of a jar.
    You would pass before the world
    as a civilian and citizen,
    if your armpit flower of shadow
    did not spread in the squares
    the roaring chives
    that your entrails suffer.
    And so you are, my green Antillean,
    in a yes it is that it is not of race,
    in ten con ten of ancestry
    that makes you so Antillean…
    To the rhythm of the drums
    you beautiful ten con ten you dance,
    one half Spanish
    and the other half African.”

    You guys are on quite the foodie tour. I have only tried croquettes at Porto's Bakery in California, the owner originally from Galicia region of Spain. Maybe one day I will have them in Spain. Nice work as always!!

      They are great in Spain. This is the first time we tried Spinach Croquettes, but it won't be the last!
