It's really clever how they sawed up the beef bones first to expose the surface area and extract all that beefy flavor from the marrow. That rich milky white broth is proof of that!
First boil is all fat and gunk from the blood and marrow, which is thrown away. You want most of the bone marrow out of the broth. It’s cut thin to do that. The white comes from the minerals in the bone. The marrow has no use in this stock except for slight rich flavoring
I left bones boiling overnight and it was milky white this morning. I haven't tried it, as soon as I get home I'm going to give it a taste. I have a feeling it will taste like menudo so I'll likely add lemon, green onions, cilantro, and hot pepper to mine!!

Bone marrow is probably one of the healthiest and delicious foods in the world. Kinda difficult to get it chopped off but totally worth for stocks.

That gets thrown out. The first boil gets all the impurities out, the second boil is more flavorful and has less gunk in it.
