☕ About the Recipe:
Raf coffee latte is a luxurious and velvety coffee drink originating from Russia. This recipe combines bold espresso with sweetened half-and-half cream to create a smooth, rich, and satisfying treat that feels like dessert in a cup.
This is our Basic (LVL 1) version, focusing on using the Lelit Bianca and the Lelit William with minimal extra tools.
☕ Ingredients:
Coffee beans: 16-18 grams
Half-and-half cream: 200 ml
Sugar: 1 teaspoon vanilla sugar + 2 teaspoons brown sugar
⚙️ Tools:
Lelit Bianca Espresso Machine
Lelit William Grinder
Milk pitcher (350 ml / 12 oz)
Serving cup (300 ml / 10 oz)

1️⃣ Prepare the Espresso
Grind: Grind 16-18 grams of coffee to fill a double basket. You can eyeball it, time it, or weigh it.
Distribute: Level the grounds in the portafilter basket with a few horizontal taps.
Tamp: Tamp twice with medium pressure, ensuring it's even.
Brush: Remove any loose grounds from the portafilter edges.
Extract: Brew the espresso directly into the milk pitcher, aiming for 30-40 grams of espresso (about 25-35 seconds).
2️⃣ Prepare the Half-and-Half Mixture
Combine Sugars: Add 200 ml of half-and-half cream, 1 teaspoon of vanilla sugar, and 2 teaspoons of brown sugar into the milk pitcher with the espresso. Stir to combine.
Steam: Using the steam wand, gently steam the mixture until it reaches around 60°C (140°F). The goal is to create a smooth, creamy texture with a light layer of foam.
3️⃣ Serve & Enjoy
Pour the foamy, sweetened RAF mixture into your serving cup. The result is a rich and indulgent coffee drink with a velvety texture and a hint of sweetness.
4️⃣ Clean Up
Knock out the used coffee grounds.
Rinse the group head and wipe it clean.
Wipe down the steam wand and give it a quick burst to clear any residue.
