Personally, I think the phrase 'cafe-quality espresso' is comical. A cafe is never going to touch the quality and care of homemade espresso.

They have a Kees Van Der Vesten (~25000 Eur), some big flat burr grinders (I am not sure of the model), their own roastery and some amazing, amazing baristas. My Niche and Bianca can never reach that level of shot clarity and sweetness. I am upgrading to a Lagom p64, maybe then I'll get closer.

I’m gonna go with the argument that at a staggering 4000 dollar difference - for a reversion to mean on all time coffee tastiness -, you could spend it all on tons of coffee or even roasting. 60kg of the most expensive Brazilian black gold is around $2K. Not excluding the fact that you could probably go towards the rabbit hole of roasting with the Bullet roaster at $3.5K. There’s so much to explore with that kind of money in the coffee industry that I actually do not believe it is worthwhile to get the GSP instead of a Bianca.

    Nice review.
While in the past I enjoyed DIY on espresso machines (a La Cimbali), at my age I find this is no longer something I want to do if it requires any significant disassembly of internals. I like the ability to call a Marzocco-approved (and very competent) tech to work on my machine if needed. Only required this service once in the first two years, and the cost was covered completely by Marzocco. Customer service and the ability to acquire 1st rate advice from Marzocco has been invaluable. Also I find the temperature stability of the saturated group to be far superior to the E61 group - it's like a rock, whereas more care and technique is required with an E61 (in the age of PID control, easier but nonetheless).
I would also say that while the GS3 can be classed as a top-of-the-line prosumer machine, it straddles the line and is also a small, 1-group fully capable commercial machine (with NSF certifications) suitable for low-volume use in restaurants and small coffee shops.

    • @RaimondoAlfano
      @RaimondoAlfano Год назад +1

I like the exposed group because it’s easily to bring the temp down when it gets too hot if it’s been running, without having to go through half a litre of specialty water in a cooling flush. The exposed group of e61 is an added bonus for me in that regard.

I have a Breville Dual Boiler and have been enjoying long preinfusion shots on it. I don’t really want to give up my hot water so I haven’t done the slayer mod. I’ve been eying the Lelit Bianca, but wasn’t sure I wanted to go that route since it seems like the e61 is less temperature stable than my Dual Boiler. Would the Bianca give me a better cup or should I skip that upgrade and save money for a bigger jump up?

the minor advantage that the gsm3 could provide don't justify the gap of 4,500 usd dollars. i do have the Lelit Bianca V 2, and honestly speaking, there is not match contender, neither in price range, double range or price wise ratio!, awesome build, consistency, creativity, and a lot headroom to play around with your taste and coffee profile

Team GS3... But mostly because I have one but mine is the AV rather than the MP. It gets used on a coffee cart and probably the best thing about it is just how many coffees you can pump out with it. You get heaps of steam and plenty of temperature stability. having said that, I wouldn't recommend it to people. Just too darn expensive and you can make a really good espresso with far less money.

Mhh, I really can’t get used to the design of most E61 machines. I mean the Bianca doesn’t look like the usual chrome bomber, but it still looks like a fancy steampunk device. I prefer the GS3 that looks like a workshop utility. I know that doesn’t answer any of the questions from the video but design is such a huge factor for me 😅 But I can’t afford a GS3 anyways 😅

The local dealers provided a Bianca to me to try in my home. The results were dramatically improved over my lever. The Bianca was a very nice machine. Very tempting. After a lot of research and discussion I decided to go with the GS3MP. That was almost 4 years ago and the decision was definitely the right one. LM makes very stable and dependable machines.

Pretty sure I k ow the answer to this already, but would the Lelit hold up to multiple shots in a row? I'm looking to start a side gig catering espresso and would probably use whatever machine I get in my home when I'm not working. Any chance the Bianca would hold up in something like that?

I’ve own the Bianca for two days and already love it. Between the two I prefer the Bianca. The GS3 is too big and expensive and I don’t like the esthetics. I’m my opinion I doubt if there even is a difference in taste, that it would justify the purchase and the esthetic and price differences.

Spro, what's the longest wait time you've ever had for an espresso? I was in line at Blue Bottle in DC today for FOURTY FIVE MINUTES to get a pour-over and an espresso. (You'd think they'd expedite the "barista's order," right). It was worth it, to get the same Costa Rica both ways, but I'll never put my girlfriend through that AGAIN! lol. She never touches coffee, yet asked to taste it after that kind of wait.

  • @JonFairhurst

My preference is… drumroll… the Mini. I like balancing time, yield, and temperature and leaving it at that. Adding flow (let alone temperature) profiling would give me too many options. I probably hated chem lab more than any other class. I’m just not an experimenter. Also, I tend to make small milk drinks, so I’m probably not seeking perfection like a straight espresso drinker.
If I were tempted to upgrade, I could probably sell the Mini, buy the Lelit, and pocket some change. I’d have to save up some real cash for the GS3. The Lelit would feel like a downgrade, so I’d probably save up for the GS3.
But if I’m to save up for any upgrade, it would be to get a large flat burr grinder over my conical Niche.
Overall, both of these machines would be great for those who want profiling. Maybe the Decent would be the other consideration.

I have to admit though, that I am looking forward in the future to try saturated group heads, like the ones from La Marzocco GS3 and the Rocket R9 One.

I think the Bianca is let down by the E61 grouphead. It may have good intrashot temperature stability but E61 machines are notorious for terrible intershot temperature management which may be contributing to the difference in results.

What is the black funnel you are using for the 58mm PF? I have tried a few and am not happy with them… they are either inside of the basket, or too far away from the basket (outside ring) which makes a mess when adding ground coffee. The one you use looks to have a smooth transition to the IMS basket..

In my part of the world , Bianca is much cheaper, basically at a fraction of GS3 cost. If I ever upgrade, GS3 or slayer it would be. And will then bother having it plumped in and use some water solution, which I believe will drastically improve the shot quality.

Thanks for this video :) I am here because of the itch. I don’t own any of these currently; but there’s a itch further more after watching this since the price point and style of pulling the shots with pre infusion is so impressively versatile. I like to ask if There’s gona be a video or is there 1 already for a slayer vs the GS3 comparison. Nvm the price point since it’s already beyond reasoning 😂
