Dialing in a New Coffee on the Lelit Bianca

  • This morning I needed to dial in a new coffee on the Lelit Bianca and I thought I’d bring you along for the ride. I tried to explain my process and everything I was doing as I went along but voiceover is new to me so there’s always room for improvement.
    This coffee (which I got tasting really nice) is from Obadiah Coffee Roasters in Edinburgh. It’s a natural Brazil from Daterra coffee farms. I’ve had plenty of coffees from that farm before, all of which have been really enjoyable. As always the coffee from Obadiah is really high quality and I would recommend you check them out if you are in the UK.
    This is my usual process for quickly dialing in a new coffee. I managed to get it tasting good after only two shots so mission successful. Whilst I am brewing the coffee in the future the recipe may change slightly or I may experiment further but I am pretty happy with the results I was able to get this morning.

    looks great! you can adjust your max pump pressure on the bottom of the machine - looks like it’s at 10 bar

      His pump pressure is actually set to 9 bar as can be seen on the bottom right. The brew group pressure hit 10. Likely because his grind was too fine it was resisting the flow hence why it was 35secs. He also could've chosen to manually control this by not fully opening the flow control paddle. Another thing that can be done is allow the puck to bloom a little on about 3 to 4 bar by suppressing the flow. Then the flow will have less resistance from the puck when going to full flow rate. Having said all that I prefer 9 bar at the pump on this machine so auto profiling stays capped at this pressure when not using the paddle

    Thanks for the video loved your content mate…been using lelit bianca for about 4 months and im opening a small mini-like cafe locally and im trying to use this machine for the cafe would you recommend it or is this machine not good for commercial use

      I think it would be great for a small operation, they are really good little workhorses. Especially if you've got it plumbed in!

    Nice setup.
    We own same Lelit Bianca v3 machine. I wish I waited half a year more, so that I would get the white coated one. Cause I believe that coating helps avoid fingerprints.
    We have same tamper also.
    I use a pullman basket (17-19 grams) and Lelits double spout.
    I am considering the Weber Unifiliter , but I am afraid that the Chrome of the Lelit Bianca can get very dirty. I am sure that at some point, I will purchase and try it.
    As for the grinder, I own the Ceado E6p. Nice grinder. 64 mm flat burrs for espresso.
    At some point in the future, I will look for single dose solution. I like the Kafatek flat max, but at this price, I can’t even think of it. The Mazzer Philos is a nice option too. The Weber Key MKii, is conical burrs but can brew some interesting espresso.
    What do you think as for single dose grinders ?
    And I would also like to ask you which puck screen are you using

    Stumbled upon your video, I couldn't but notice that despite your paddle being all the way to the left, pressure rose quite quickly-on my Bianca, keeping the paddle there takes up to 25s to see beading. Perhaps it's intentional but if it isn't, you might want to adjust the paddle to have 0ml/s when fully closed to about 6ml/s when fully opened. It seems that your current setup doesn't completely stop flow when in the closed position.

    I have been dying to get my hands on one of these machines.... soon! More importantly: What is that contraption you have to hold filters, the scale, the spray bottle, etc. I am always struggling to organize my many coffee gadgets!

      Its from a guy on etsy who makes filter organisers. They are 3D printed pretty cool but quite restrictive if you ever get a new brewer.

    Hi Mate. thanks for the video. I just got a lelit bianca using a 21G Pullman basket, brew boiler set to 94C - I'm finding that with the flow rate fully open im sitting at around 10 bar pressure. Do you find thats where you sit in a majority of your extractions? Cheers

      Hey! Yes my pump is set to 9 BARS but often reads at 10bar on the manometer on the front.

    What is the ceramic plate called? the one you used to weigh your beans!

      It’s a dosing tray made by loveramics - I got mine from tens hundreds thousands but I don’t think they sell them anymore. It’s based on a product traditionaly used in tea making called a Cha He. A Cha He can be found relatively cheaply online and they work great for measuring coffee beans and are much cheaper than this loveramics one. Hope this helps.

      Its an IKEA Kallax unit with a solid oak top. The kallax unit has been reinforced and raised onto a platform to increase the height.

    Get a bellow. Dont knock niche. Well you can it’s yours but get a bellow. You have every option known to man on that table except a bellow.

      I have the niche and a bellow, knocking it is absolutely necessary even after bellowing for the amount of coffee left in the machine
