Loving your videos mate. The WM180 is a great little mini lathe. Its super handy having some tips and trick as I didnt really pay attention to metal working in school around 20 years ago hehe.

how do you know what angle to set the tool to against the work piece?

So with the lathe the Apron/ carriage runs parallel to the work piece. So when you turn down work as you are single point cutting the angle is irrelevant as long as your moving with the carriage hand wheel. The angle of the compound/ tool post is more for clearance depending what tool you have in.
Long story short as long as your tool has the clearance for the type of feature your turning to then you’ll be fine.
      Hope that helps.

How'd you know which lathe bit to use, and why is your tool post set at an angle>?

So generally if turning down a piece of stock moving towards the Chuck then you went a tool that is shaped to the left. As for the tool post I’ve slightly turned it to give better chip clearance around the nose of the tool. When single point cutting the tool post angle doesn’t matter as the carriage will be moving Parallel with the work piece. Hope that helps
