Tried this today morning. OMG it was incredible! Creamy, rich, perfect for this cold weather. A few adjustments - I didn't have kale so added beet greens, I added an extra cup of water which seemed to balance out the thickness very well and I added some ginger which gave it just a little kick. Excellent.
A note: I revisited this recipe as a souffle. It came out great. Use whipped aquafaba for the egg whites, coconut oil for the butter and almond flour for the roux if you want gluten free. It may take a few tries to get the consistency right, but you will get a nice vegan, gluten free key lime souffle!
