That is your version of corn fritters. The ingredients for my corn fritters are corn, shrimp, shallots, chive, flour, chilli, water and a pinch of salt. I use chilli sauce or peanut sauce for dipping. This is the savoury version while for sweet version, I use only corn, a pinch of sugar and salt, flour and water.
Q: 2:58 you said the protein in the eggs make the fritters soft. Does this mean replacing some of the wheat flour with chickpea flour would have the same effect? I thought the heavier flour would make them stodgy. Thank you: I am looking forward to trying this on a high-energy weekend day! Instead of the room temp water, use ice cold water for the batter , the crunch will be beyond imagination...

I only use gluten flour I don’t have so many flour
