- After our visit to Kohima, our Nagaland food tour continued in Dimapur, the state's largest city. On our first day, we explored Dimapur's bustling New Market alongside our wonderful host Louis, a talented home chef and baker. Later, we had the pleasure of cooking and enjoying a delicious Naga meal at her home.
Before meeting Louis, we had a delightful encounter with a friendly Bihari vendor and engaged in a warm chat. It was surprising and heartwarming to see a significant Bihari population in both Kohima and Dimapur, particularly in the street food scene.
As we strolled through New Market, we immersed ourselves in the world of Naga cuisine, discovering unique ingredients like black rice flour and anishi. Armed with these ingredients, we embarked on preparing a traditional Naga meal, featuring dishes such as pork with anishi, rosep, and fish with bamboo shoots. What followed was a pleasant discovery of taste and culinary traditions.

Every tribe has a distinct food flavour but we all love to eat. Our sister explained in detail and our forefathers developed those ideas to keep for more than a year till the next season and we still follow today.

There are good people and bad people in every society.I was born and brought up in Nagaland.There were good people and bad people in Naga society also.I have personally experienced.So no hard feeling.In this world bad people are more.The thing is that when we meet some bad people we think all the people of that particular society are bad.But it is not like that.

M from Bhutan but did my schooling from dimapur long time back. The most important thing I missed is pork and akhoni. I love Naga food n miss everything everything actually. I wish I m there 😭
As an Assamese who is familiar with the local Naga cuisine, this series has been an eye opener that has filled in a lot of blanks. Thank you! I still haven't developed a taste for akhuni (fermented soya beans) even though my Ao sister in law has tried hard, but the rest is fantastic, especially the pork, chicken, fish. Very popular here. BTW, that is a kitchen that we should try to replicate here in Assam. It's really how things were before we got "civilized".
While I appreciate Anubhav's work, but at the same I have to tell you that naga food isn't for my stomach.

Naga food is one of the unique food in India which is predominantly cooked of local fresh vegetables and ingredients except some pork and fish are imported items. If you want to boost immune system, don't ignore to try Naga food.

I'm missing my home town when I see those authentic Naga food cook in fire looks super delicious . One thing she miss out to cook for him simple Vegetble boil with little salt as a non naga everyone cnt eat those eggplant and bitter gord sabzi.
