    You've inspired me. This year I'll do my bird spatchcock. I always do an injected cajun and rub style; everyone loves it. I got a good laugh out of the "baby turkey" segment. I didn't see that coming! Keep up the good work and I'll keep watching.

      Very nice! Spatchcocked is definitely the way to go. It's not the traditional way but the flavor is better and it cooks much faster and more evenly in most cases. Thanks so much for watching and have a great Thanksgiving.👍

      @@SmokinJoesPitBBQ Not really sure I've never seen a pellet Smoker here probably they do have, people imported them privately through Amazon but I've not seen any here for sale. I've seen the ceramic cookers for selling here but pricey. People here more do grilling I might be the only one in my area where I live that actually uses Chunks of apple wood for flavor. I buy the Western brand apple Chunks or peach or Cherry when I can get. Now with the covid those things are harder to get.

    Joe when I spatchcock any poultry I like to take the breastbone otherwise known as the 'Keel' bone out also and maybe that's why you had a difference in the temperature of the breasts thanks for the show

    I always rub mine under the skin with honey mustard dressing, maybe add some rosemary and thyme to it. Grill over charcoal at about 350-375.

    Fantastic Joe! Turkey looked delicious before it was cooked even better afterwards. I'm really diggin that pizza screen because it makes it so easy to turn. I love the pregnant Turkey joke since they lay eggs not live babies. I saw a video once where a mom helped her daughter cook her first turkey, after they were done prepping the turkey the mom slipped in a game hen. When they started to cut the turkey for eating the daughter saw the game hen and freaked out because they cooked her baby. Some people are so gullible. Great video brother.

      Hello Stew, I vacuum seal and freeze after the leftovers sit in the fridge for one day. Vacuum sealing keeps the food fresh. I actually purchased my vacuum sealer from Cabelas down the road from you when I lived in Surprise...175 Ave by the Chevrolet dealership.👍

      @@colinheffer3598 no worries. It's all part of my Yoder YS640. There are 2 probe ports on the controller that I plug the temperature probes into. The application is what I showed on the video.👍

    Great video Joe! Exactly how I used to do mine. I moved to a rotisserie over spatchcock last year but I do everything else the same. I am looking to invest in a new injector though. Can you provide a link to the one you used here? Thanks!

      One bag will do about 6 turkeys. Depending on the size. 👍What you don't use, use it on chicken.

    1/2 Star Sucklebusters is way too hot. I couldn't taste the bird. You need to mention that you long ago burned out all of your taste buds. That competition injection is full of MSG and I have a problem with MSG so I couldn't use it. It was a waste of money for me. Now I have to see if I can scrub the rub off my bird and reheat it with butter on the skin. It really a crime too because it looks so good but it's just a big pile of salty hot pepper dust on roadkill. The butter spray was the only good thing.
