I actually recommend not training against a monster in regular quests, since your loudout won't be the same and the environment also plays a factor. It's best to just use the arena quest itself to train, you'll get a feeling for stagger values and stuff as well.
However what you can do is to use a certain style that you'll have to use in the arena for regular quests to get more aquainted with it. For example if you like playing SnS but never play Adept SnS, you might wanna learn adept style by just using it for various normal quests a bit and then start practising the actual arena quest.
And if you're hardstuck, consider using a different weapon even if you're not as comfortable with it. Some sets in the arena just suck and it'll be hard to get S Rank even if it's your favourite weapon.
