Hey Mary…I decided to watch this video again to remind myself how to add that texture to the buttercream. Then, after watching, I realized that I couldn’t remember if, when the display base that your cake will be sitting on is quite a bit larger than the bottom tier (like an 8” bottom tier sitting on a 12” display board), should that bottom tier be placed directly on the display board or first on an 8” board, then taped or glued to the display board?
Can you tell me where you get your food safe florist tape from, please? We use posy picks or straws in the UK as a kind of mini vase because florist tape/wires are absolutely not food safe and must not be placed directly into a cake.
Maybe the regulations are different in the USA as I was cringing watching those artificial flowers/foliage being pushed directly into the cake! It’s a beautiful design though, but I’ll definitely be using posy picks!
Well it is hard to say for your area because it is different everywhere. Where I am I would charge about $65. It is a smaller cake but tall. So I would say about 20 servings. You can get twice as many out of a double barrel if it is cut right.

And.........I was so into watching the folding of the paper, and then I glanced down and all I saw was "dead body". My mind was like "what the hell is a dead body doing with this video?" Then I read the whole thing. Then I looked at the robe. Seriously. You had me going for like a few seconds. "drama, mystery, suspense!"

Hi Mary! Thank you so much for sharing your techniques. I had a problem with the buttercream though...after firming up in fridge, I put the 2nd color on top as you have shown and scraped it off. This scraping caused the blue buttercream to change into a darker blue and came out like streaks on areas where the buttercream was touched. What can I do to prevent that from happening? Please help 🙏
I find that that typically happens if you scrape down to the first layer of buttercream in some places. It has happened to me too:) So I would just say to maybe add a little thicker layer with the second coat and try not to scrape too much. I have better luck if I try not to over work it. I hope this helps and know that it just happens some times.
That can be a little tricky. You can airbrush it but it can warp the paper a bit. You could also dilute food coloring and add water then brush it lightly onto the paper. Be careful not to oversaturate it for the same reason as before. Or you can dry brush petal dust or luster dust on to it. None of these will give you a deep color. But I hear you can order precolored paper. I have not looked into that yet, but that might be an option?

I use a crusting American for most of my cakes, but this could be done with a Swiss or Italian meringue also.

It is never too late. Because I can always use your advice for another cake. It was for a party and the person didn’t chose the decoration.
