i worked in restaurants for years and never understood why places buy fries when potatoes are so cheap and it's not hard to cut and blanch and have on hand to cook per order for the best fries. makes me think everything else they serve is bought frozen and pre packaged.
It’s for 2 reasons: convenience and preference. Some places have really great frozen fries. Some places have really good fresh fries. Some places have terrible frozen fries. Some have terrible fresh fries. It’s easier to do a frozen fry and requires less labor. Sometimes frozen fries taste better but that’s up to brand, oil and who’s preparing it. Simply it’s up to convenience and preference

I disagree they got the best by far, the problem with charlotte is, they put cheese on top of the beef instead of mixing in like daves cheesesteak
