@@M8-20 You can bake them as potato wedges instead of deep frying them in like 3/4 tablespoon of oil and that will greatly reduce the calories and they’ll pretty much taste the same.

After you get used to it, it's delicious and you feel really good afterwards. Not many people have this relationship with food where they treat it as fuel for their bodies instead of just a tasty treat.
I boil potatoes in pork broth (which I get from boiling pork belly to tenderise it). Few things are tastier, and yes, I do keep the skin on. Talking about foods that are as tasty with so little effort, only sweet potato and beef (boiled with a dash of pepper, salt and cinnamon) trump potatoes for me.
At school in domestic science I learned that potatoes are much better than eating rice. Potatoes are alkaline ash and rice is acid ash. I’m 87 but never forgot

You did not talk about the point that I am most concerned. I always assume that sweet/yum potatoes are considered much healthier because they contain more fibers. Compared with them, regular potatoes are less healthy because of less amount of fibers and lift the blood sugar level faster. Is this right or wrong? I usually do not eat skin of potatoes as most of other people.
acatinny the problem is not with the blood sugar spiking, but with your insulin resistance being incredibly low forcing your bodies blood sugar level to spike.
This whole demonization thing of white potatoes is totally ridiculous. I eat them everyday and ive been losing weight just fine. Why? Its because I dont add tons of fat and calories to them. When I bake them, I add just a small spray of olive oil to the skin and eat them plain with salt and pepper. I think people add things like cheese, sour cream, butter and bacon to them and dont factor that in. That can easily add 100-400 calories to a baked potato. Potatoes are an excellent weight loss food. They are incredibly satiating and delicious on their own. And cheap!
I love potatoes, I have them everyday. However, I am not sure how many minerals and vitamins are left after I have boiled them, even with their skin on!
I doubt you're losing much to the water, but if it bothers you, use the least amount of water necessary to cover the potato, then when the potato is done, remove it if you don't want it over cooked, but let the water continue uncovered to reduce (or just evaporate since it's not exactly a sauce), and mash your potatoes with the reduced water to return anything the water leached out. Or just bake them instead of boiling them.
For snack, I just pop one in the microwave for 10 min, flipping halfway, and eating it like a hot pocket, no salt, no sour cream, and I find it filling enough
