    In this video, we're going to talk about bread and potatoes. Which of these is worse in your diet?
    Let's take a look at potatoes by evaluating where they're at on the glycemic index. The glycemic index is used to measure how much a particular type of food affects your blood sugar levels. The higher on the index a food it, the worse it is for your blood sugar levels.
    Potato
    • Instant potato: 97 (close to pure glucose)
    • Baked potato: 84
    • Boiled potato: 82
    • Raw potato: Very low
    As you can see, over-processing or cooking potatoes makes them bad for you. You could eat as many raw potatoes, and you won't have a problem. However, cooking them breaks down the starch and makes them extremely high on the glycemic index.
    Even sweet potatoes are high on the glycemic index. They have 3x more sugar than regular potatoes.
    Now let's take a look at the glycemic index of bread.
    Bread
    • Whole wheat bread: 74
    • White bread: 74
    As you can see, whole wheat and white bread are both the same on the glycemic index. They are also lower than cooked potatoes.
    However, bread often contains harmful substances, including:
    • Bleach - this lowers your level of vitamin E
    • Phytate - this reduces your zinc levels
    • Gluten - this causes gut inflammation
    Bread causes a delayed spike of insulin and blood sugar levels. It can often take 2-3 hours before you see a blood sugar spike. You get an instant spike of blood sugar levels with potatoes.
    The average American consumes 53 lbs of bread every year.
    The question is, which is worse: bread or potatoes? Well, they are both bad in their own way. Potatoes will cause more instant blood sugar issues, and bread will cause more inflammation and nutrient deficiencies.

    Also if you boil potatoes & leave them in fridge overnight, part of the starch turns into resistant starch which is good for your gut's health. So enjoy a potato salad for instance.

      @@Dowlphin I've seen one study where they measured the blood sugars of a group of people who had cold potato and rice then measured it when it was reheated. The blood sugar levels were lower with the reheated carbs showing that more resistant starches were created by reheating them

      Very true, I noticed some people who have watched these videos and they don't really understand it so they go with quick advice and get things mixed up.
      And people on the processed food/sugar diet have brain fog which means they really can't understand things that well.

    I'm surprised why he didn't mention the nutrient content of each of these, particularly that potatoes have a lot more potassium and B-Vitamins. And since each of them both spike your blood sugar about the same honestly after 70+ on the glycemic index it's not much worse, I'd rather take the potato since it's much higher in nutrients.

      Not to mention a crazy high amount of Vitamin C which bolsters your immune system. Plus a potato's fiber content can help fill you faster; one solid baked potato and I'm not even going to LOOK at food for a solid chunk of hours later

    Never posted a comment on Tube before in my life but after watching this, I just can’t hold myself back. I like watching Dr, Berg but when I hear this I have to disagree on the health benefits. See, I am from Belarus, and in my country we call potatoes a “second” bread, meaning people primarily live on this stuff and of course we eat other awesome food too :)And I mean we eat it like we breath air every day. We eat a lot of it! A lot!!!! I have never seen a fat or unhealthy person due to obesity in my life until I came to USA. I just have to disagree on this one about potatoes. Also, because it is cultural and it is in my blood:):):):) I almost felt unsalted:) JK! However, America’s food problem is not potatoes and bread, it is sugar that is put in everything and the worst one is in liquid form. And top that off with extreme laziness and sedentary lifestyle- results in neat picking things like “which is worse, bread or potatoes”!
    C’mon!!!!! You are splitting heirs here.
    Stop eating everything that has sugar, stop drinking soft drinks with sugar or any drinks that loaded with it! Stop eating processed foods, like powdered potatoes, pizza and pasta!
    Eat good black bread and potatoes with good quality meat and high in animal fats, and vegetables. It’s an American lifestyle that make people eating potatoes unhealthy.

If you wanted a more accurate indication of dietary health, you would look at obesity rates and the outcome is pretty clear. The US has an obesity rate that is nearly twice as high as Belarus.

Such as health care, poverty levels, sanitation, drinking water, housing, air quality, etc. Your argument is that because they live longer, they have a better diet. That’s stupid and reductive. You’re ignoring any other factor that could contribute life expectancy. You literally cannot argue against the obesity rates. Only two factors contribute to that and that’s diet and exercise (and maybe genetics to a certain extent). The fact that America has a waaaay higher obesity rate is 100% indicative of their poor diet and lifestyle. The difference being is that their obese people have better access to healthcare and therefore live longer. If cannot grasp this incredibly simple concept, then I would just stop talking.     It's too bad that he didn't mention the amount of carbohydrates each one contains.
    A potato has about 20% of them, while bread has about 60% of carbohydrates, that's quite a noteworthy difference.

Chaconine and solanine are natural toxins in potaotes, and the first can be lethal. They have more than that too.. for instance stuff that prevent you for gaining much use of that protein.

      @@Goldenhawk583 By 1844 the Irish people had come to depend on the potato for their nutritional needs so much so that around half the population relied on them almost exclusively and that population was exploding. When the Great potato famine hit a year later by the time it was done around a million people had died from starvation and other famine related diseases. Good thing though. If they'd continued eating all those toxic, "lethal" potatoes I'm sure things would have been worse.

    I eat baked potato's cut into wedges, coated in avocado oil. I fast all day till 3:00 PM, have three eggs with one avocado. Then have dinner at 7: 00 pm.
    A protein, the potatoes mentioned above and salad and steamed broccoli or asparagus. This works great for me, I like the fact that potatoes are very high in potassium, and no gluten. The avocado oil also slows down the glucose absorption. So I'm about 80%..lol no ones perfect. Thanks for another great topic.🙂

    Another interesting thing about potatoes- a businessman named Chris Boyt went on an all white potato diet for 60 days. According to Dr. Berg, this should have had catastrophic results for his blood glucose levels. In fact, however, after 60 days of eating nothing but potatoes, Boyt's blood glucose went from 104 to 96. He also lost 23 pounds, and his cholesterol levels went down by 31% (his LDL by even more).

      Exactly and so many others. You have to eat it cold after you cook it. There's a science behind how the starch works. I lost 7lbs in 7 days eating just potatoes and no longer craving sugar or other foods at the moment. I will continue...

    Potatoes are just about the most nourishing vegetable that a person can eat.
    Before the Great Famine in the 1845, the Irish were the healthiest peasants in Europe. They essentially sustained themselves on potatoes and some green vegetables. They ate potatoes with every meal. Hence, the devastation when the crop failed but the health benefits of potatoes are not to be underestimated.

      I am very athletic (I run, I box, I do HIIT training and do weights) but I am not going to deny myself certain foods in moderation.

      Being alive and being healthy are two different things. You'll see people with great shape dealing with liver, kidney issue because they are overloading their organs with heavy processed protein supplements.
      Oh, and Irish stayed alive because of the fat that was mixed in with the potatoes. Homemade fat, not our heavily salted, grain fed cow butter. Fat buffers the spike of insulin that's why it's always a great idea to add a table spoon of fat with rice or any carbohydrates. Not sugar, I'm saying natural, unprocessed carbohydrates like rice, potatoes, bread, tortilla, chapati ect.
      Real goal is to live as long as possible with every organ in good shape. Then it will not matter how much muscle mass you have or how much fat you have.
      Example would be the Sumo wrestlers from Japan. They look extremely fat but the studies have shown that their organs have little to no fat accumulated over them.
      Then we have Japanese population with very low muscles mass but they live longer than average American or Indian or anyone in the world.

      @@Nuno_N also there's a difference between the potatoes they used to eat and now the potatoes we eat. Their potatoes were rugged, with hard skin, a lot less water content, a lot of fiber, hell lot of nutrients because less pollutated soil and almost no pesticides.
      Now we have white potatoes that are almost 90% starch and people peal those so almost all the nutrition is gone.
      In past people used to add cow/buffalo dung to the soil as a natural fertiliser. That increased the nutrient quality of soil and also the nitrogen profile.
      Now people just spray the plants with chemicals.

      Saying smth is high in sugar is not the same as saying their all the same. Honey is high in MANY good things for your body, it’s also very HIGH in sugar, if sugar is a big concern for you, due to your specific health issues, it’s something to consider, regardless if it has other good benefits.

      He's saying it from the viewpoint of being in a ketogenic diet. You can't do a ketogenic diet with sweet potato unless you only have a tiny piece. There is a literal limit to how many carbs that can be consumed and at the end of the day sweet potato has more

    I'm Irish, our whole diet had been based on Potatoes and White or Brown Soda Bread. Since the Supermarkets came about and the junkfoods in them, our diet had changed a bit and so has our health.

      Monokuman Nius No I disagree completely with you. If you have some sort of disease or illness then yes a lot of healthy foods can become a problem. For instance if you have sibo you basically can’t eat a lot of healthy vegetables. Or if you have inflammation you need to cut out nightshades legumes and other healthy foods. But if your a normal person Sweet potatoes are great for you and have a ton of health benefits. If your eating them everyday for every meal, then you may run into some issue just like with anything. A lot of people think something is good for them so they OD on it because they’re looking for a silver bullet all the time.

    At this point we should only drink water and eat ice cubes. I’ve found out that the more you watch this kind of videos, the more paranoid you get. Just eat in moderation and enjoy life.

      At what point? “Eating in moderation,” means nothing if you don’t set some guide lines first. Eat meat, veggies, and fruits. You’ll be fine. I’m almost certain you can go absolutely crazy and eat those three things till you vomit and you’ll be just fine.

      I did that till I was diagnosed with type 2 diabetes,then cut out sugar and bread it took 3 years to reverse it,also I fasted,so happy to be diabetes free🎉🎉🎉🎉looking forward to keeping my legs and not going blind was worth it

      What you are experiencing is called "decision fatigue", where you are so tired of choosing things that you would rather choose anything. But one thing that is made very clear from these videos is that some bad things are definitely much worse than other bad things. No matter what food decisions you take, avoid at all costs stuffs with tons of sugar like sodas and common sweets and trans-fats, like margarines.
      I am sure that potatoes are pretty decent compared to that, but they will still pull you out of keto nonetheless.

    When I started really keeping track of carbs and sugar, I was shocked to discover that mashed potatoes had much less of both compared with rice off any kind. I have always opted for rice thinking that because it was a grain It was better.

    I think what we need to realize is Dr. Berg promotes and lives a strict keto diet lifestyle. So the information he gives first and foremost is towards those that do the same. Can someone eat bread and potatoes and still be healthy, of course. Nevertheless Dr. Berg is still one of the best source of information on diet and health on RUclips in my opinion.

      @@AnGeLaOYA That break down leads to an insulin spike. It's not really misleading. When your blood sugar goes beyond that level (110 I believe) it produces this hormone called insulin that makes you tired & groggy etc. Because it's attempting to get your blood sugar levels back to the healthy range. I won't say it's bad to eat potatoes but your essentially annoying your body every time you go beyond the tolerable amount of sugar your body needs. When you use sugar as an energy source instead of fat & protein your body stores the fat you have instead of burning it as an energy source. The fact that your body can use sugar from food(glucose) or fat (on/in your body) as an energy source should be enlightening to say the least. Now you should know why our bodies store visible fat it's no longer a mystery sugar is the culprit. This is why keto is amazing for overweight people now your body burns the fat you have. Eat foods that turn to glucose you turn off this action.

    for me just removing the very processed things like flour, seed oils and sugar/honey/syrups/artificial sweeteners was incredible. two months in and my acne is gone, my period is stabilizing (by the second month i didnt need a pain pill after 10 years of excruciating dysmenorrhea). my fiance lost 7 kgs what he was struggling to budge in a year with intense exercise, and his eczema has calmed down. there are other smaller things i've noticed improving all the time.
    but i eat potatos, sweet potatos, (with peel), rice too (sometimes white, sometimes brown). even dense bread made with sprouted grains. about every other day in some form. however the rest of my food is vegetables, fruits, meat, eggs, dairy, nuts. that is it, and key point here is to not cheat (no matter how annoying it is to have to explain yourself for trying to eat healthy every single time you visit family 🙄).
    if anyone is watching these videos and wants to try something to heal their body but cannot imagine themselves on strict keto, this is your sign to NOT let the strictness of these videos discourage you. of all the "half measures" i've done in my diet to get better (i tried getting off dairy and eggs because i showed sensitivity to them, i tried intermittent fasting and found it too difficult) this is the one thing i can genuinely vouch for to every single person i talk to. it's ok to eat a potato, (unless there's something more drastic you're trying to target and you are prediabetic or such!! there is a time when it's necessary to heed this advice im sure. i just think it's dangerous to fall into an all or nothing mindset when there is something you COULD try that might just be enough).

      @@Jb-ky1ri hey! i don't eat white flour because it's overly processed. but i dont avoid grain, so i do include 100% whole grain things like oat groats, or ezekiel bread which is made of sprouted whole grains. because the bread is dense i physically cant overeat it and it is nutritionally rich, it seems great for me.
      i showed sensitivity to eggs and dairy on a food sensitivity blood test, so i avoided them for a while to try to regulate my hormonal issues. i dont know why eggs were there, and including them back in my diet was so good for me lol. i can't tolerate lactose too well, so im assuming that's the dairy sensitivity part - but i brought yogurt, kefir, cheese etc back in my diet and it causes no problems.
      there are some nuances for individuals when it comes to food but the general principle to avoid overly processed food i believe absolutely everyone can benefit from :)

    I did keto for two years. I stopped and went back to eating carbs. I gained plenty of weight back. I then started a running program that involved cross-training and lost the weight again, but I ate carbs like anyone else. Keto is a great tool for those trying to lose weight even without consistent exercise. But I find it easier for me to work out more while being very consistent than staying away from carbs. Some people can actually maintain a keto diet for long periods of time. But for those who want to get back into eating a lot more carbs than they do I suggest working out more and consistently with intermittent fasting. Then you'll be able to eat those foods you surely miss.

      Same here, start gaining weight after leaving keto diet, come on, I don't want to be an alien at dining table for the rest of my life. Keto diet is good if you are obese and have other difficulty to exercise, but please do not depend your life on it.
      Now I'm eating whatever I want but in controlled quantity plus regularly exercise (running 3 times a week with 10KM each). To my surprise, I'm start losing weight, and now I'm able to keep my weight at ideal BMI, without losing the joy of eating good food.

      @@wan4623 It doesn't matter if you are on keto or on normal carb diet. If you eat less calories than your body burn, then you will lose weight. Keto might be good for obese sugar filled americans, who don't have time or can't exercise. Proteins and fats are pretty filling, so do whole grain carbs. But when someone is accustomed to american eating, it's hard to convince these people to eat whole grains, it's easier for them to follow eating fat and meat. Keto and exercising are kinda bad mix, unless you are on very strict keto for long time, which is very exhausting to avoid much of the food like veggies or carbs, and eat dietary supplements with some minerals/electrolytes. I've dropped keto because it was unsustainable and annoying with my exercise regimen.

      Yeah, unless you're already very unhealthy it's fine to eat everything. Also, it's not like people are just going to eat potatoes without anything else. The GI will go down drastically if you eat the instant potato with other vegetables and chicken or fish. It's not like people are gulping plain instant potatoes as meals.

    One thing I would recommend when doing these comparisons is to compare the insulin index rather than the glycemic index. They arent the same. And we should be concerned with the insulin index.

    I'm convinced that every food is unhealthy at this point, so I need to just focus my diet on foods that are just "less unhealthy." I have limited knowledge on the subject, but I'm sure eating a potato is better for you than a cheesecake.     You need carbs if you are skinny and want to get bigger and i think that we can consume potato without problems.

    Love your channel Dr. Berg. I gave up both bread and potato. I was miserable. I've started eating potato again once a day. I so look forward to my potato. I'm trying to lose weight and I know that deleting both from my diet would accelerate the weight loss but I'm happy to go slower and eat potato. I have given up all cakes, added sugar and processed foods. And I'm definitely, leaner, happier and more energetic. But I don't have blood sugar issues just too much fat. I'm Irish and we love our potatoes.

      There are alternate theories about starch and potatoes. Dr. John McDougall wrote The Starch Solution where he calls potatoes the perfect starchy food. His lectures are interesting and bring up a lot of good points. I mostly eat rice, potatoes, and eggs all made with grass-fed butter and I've never been healthier in my life. A perfect meal for me is mostly potatoes and rice with a couple eggs and some veggies and maybe a little meat. I don't feel satisfied with meals that are mostly veggies or greens or meat, your body needs that quality starch.

      Enjoy some of life’s tiny pleasure is also important as you pointed out. At least the potato gives us so much potassium (1,000mg) and vitamin C. It’s takes a lot of eating to get to the potassium DV of 4,700mg without potatoes. A potato knocks out 25%

    You can substitute cauliflower, cooked and run through a blender. I like to add some cheese, as it tastes great with cauliflower. I just used it for Shepherd’s pie, it was great!

Living your life with a chronic disease can be hell, especially later in life when it really starts to break down your body and gets even worse... possibly creating other diseases, which is the case with many chronic diseases. Now, if a persons diet is very very clean already, I don't think potato or bread here and there will do any harm, but the thing is... everything adds up, especially when majority of the population have an absolutely garbage diet, which most people don't even realize. Eating few pieces of bread will be much worse to someone who already has high bloodsugars, eats candy and junkfood every other day and consumes pastry and chocolate every time they have a cup of coffee.

      @@solekhashuwa I think I have seen places that mention keto and fasting can be bad for women's hormones. Maybe it's just not for everyone. No diet can be perfect for everyone. I try to listen to my body . I have tried plenty of times to go sugar free (not even keto ) and I found my brain felt asleep and mood low. I even tried it for 8 mths at 1 pt. Then I had sugar and felt way better. My brain could think and I felt much better mood. Try small amts. At times I am ok, other times I need a sugar hit. Maybe we need some tricks. Like eating fermented foods. Not sure . I have to keep reading.

      @@juneberry1982 We don't use bread often so I freeze any loaf I buy and thaw out as needed. Refrigerating tends to dry out the bread and it still gets moldy. But if you freeze it, it keeps the moisture. At least that's my experience AND it keeps my husband from sneaking and eating the bread out of the bag! (He's too lazy to thaw it AND he knows he'd get caught!!!)

      Preservatives definitely make a difference. And organic loaf will get mold after about a week, others take up to 3 or 4 once I by them. I always freeze organic bread for that reason.

    Excuse me Dr. Berg, I have always known that the "Sweet" potato is good for diabetics because it has a lower glycemic index than the normal potato. In fact the sweet potato only has 46 GI vs 97 of normal potato. Is there something that I don't know? Thank you!

      That 46 GI depends on how it's cooked. Some GIs go as high as mentioned. Peeled, baked is 94. Peeled, cubed and boiled is 46.

      Potatoes aren’t bad. They’re awesome carbs w little fat so as long as you’re working out and burning them off, you’re good to go. It’s what you put on them that kills ‘em.

      @@eb6195 Resistant starch in potato is when you cook potato and chilled it overnight then reheat it. The GI index will be lower. This is still being debated.

    This will be one of the few times I'll deviate from what Dr. Berg says. To start out, I don't eat bread or pasta at all. Potatoes are the only carbs I eat. I eat potatoes once a day. I pan fry them in grass fed butter and along with the 4-5 eggs I consume (which are organic pasture raised). I think the good that I get benefits the bad in this instance.

      I think I'm gonna do this too minus the butter. I have been low carb off and on but not enough energy and too low weight. Even with meat and eggs I'm still so hungry, etc. Gonna add potatoes. This is safer than grains.

      Which is the exact opposite of the truth. It is the potato itself. Starch is just a string of glucose molecules, which get quickly broken down in the body (hence the high glycemic index). You overload your body with sugar, either through directly consumed sugars or starches which are quickly broken down into glucose, and it gets converted to fat (specifically triglycerides) and stored in your fat cells. Also you will never burn the stored fat because the excess sugar consumption signals your body to preferentially burn glucose for energy, and your high glucose intake gives you more than you need, so no need to ever dip into reserves.
      The only way to get your body to burn fat if you eat the standard diet is through calorific deficit - deliberately not eating enough or fasting. Undereating works, at least temporarily. But sustained undereating is both physiologically and psychologically fraught, and generally results in weight being regained when the person just can't take it anymore and throws in the towel. Fasting and can be sustainable long term if you aren't starving yourself during the non-fasting periods. Our bodies much prefer a feast/famine cycle, because they are designed to handle this. It is the reason we store fat. There are many benefits to doing so, as it allows our bodies to switch modes from processing food input to other maintenance and repair work that doesn't get a chance if we eat constantly.
      The best way to go is to minimise sugar intake (and remember, sugar also means complex carbs, which are just sugar molecules joined together), and instead focus on eating protein and fat. Protein is used to build and repair your body, and if you eat a lot of fat and not a lot of sugar, this signals your body to preferentially burn fat for energy, and to reserve sugar for those cells which can only run on glucose, chiefly red blood cells. Also note your liver can manufacture sugar on demand from both protein and fat, meaning you don't actually need to consume any at all in your diet (unless you have a condition that requires dietary management of blood sugar). Combine a high fat, high protein, low carb diet with regular periods of fasting and your body will eventually get into the swing of burning fat wherever it can, and will burn off all those excess reserves. Indeed it will waste energy just to get rid of excess fat. It will burn it for the sake of burning it, as it gets the message it no longer needs those excess reserves and is not being inundated with excess sugar that it can't do anything else with. Note this is indefinitely sustainable, as unless you are dangerously underweight, even someone with sub-10% body fat (like a bodybuilder on a cutting cycle) carries more than enough energy in their fat tissue to meet their body's daily energy requirements and then some. Your body knows how to maintain a healthy weight if you give it the right inputs.

      Almost seems like he’s developing a phobia of sugar at every level. I understand if your a diabetic that sweet potatoes may not be the best to eat all the time. But for an average person it’s one of the most healthy foods. And also it’s not like it has fructose as the type of sugar. I just don’t get some of the stuff he says. I actually personally know a friend who reversed an autoimmune disease by doi a strict diet and one of the main foods she ate all the time was sweet potatoes...

    I’ve always liked raw potatoes. When I was 3, my mom would peel potatoes and I would ask for one and eat it. She then would peel an apple and gave it to me and I’d throw it on the ground because I wanted RAW POTATO

    I have to say, I find your videos interesting and follow a lot of the ideas. However, when I see so many so-called experts with conflicting views which they are adamantly certain on, I find the whole idea of following nutrition advice to be suspect. I don't really believe that boiled potatoes are bad for you, I also think sweet potatoes are very healthy. Some of the longest living people in the world eat a lot of sweet potatoes, I believe in a region of Japan. So much food advice seems like an attempt to stay relevant and gain and grow an audience for monetization. Not saying that is what you are going but it is very hard to know what to believe. Very often I see people in the comments talking about how they don't know what to eat anymore. I think eating whole foods is good and lots of vilified foods, in general, can be good for the body. Generally speaking, the advice "Everything in moderation" seems to hold weight when it comes to food.

    There are alternate theories about starch and potatoes. Dr. John McDougall wrote The Starch Solution where he calls potatoes the perfect starchy food. His lectures are interesting and bring up a lot of good points. I mostly eat rice, potatoes, and eggs all made with grass-fed butter and I've never been healthier in my life. A perfect meal for me is mostly potatoes and rice with a couple eggs and some veggies and maybe a little meat. I don't feel satisfied with meals that are mostly veggies or greens or meat, your body needs that quality starch.

      Sweet potato can be eaten raw (e.g. is nice with hummus), & is NOT high G.I. raw. BUT other potatoes cannot be eaten raw & i think are poisonous thus.. Boiled new potatoes are lower G.I. Any cereals milled as flour are high G.I.

    I started a very low carb diet 2 months ago, Lots of Beef Tallow, Coconut oil, mainly meat & fish, eggs, avocados. Im a skinny, tendon Guy. I’m working out twice a week. I’ve unfortunately already lost a half stone, that I can’t afford to loose. I need to put weight on. I feel that I have to eat some carbs to gain more weight. Thinking of doubling my Beef Tallow intake, Is that a good idea? Potatoes are starting to appeal to me, as the least bad carb (I presume better than pasta, bread and rice). What’s de best Carb to eat for weight gain?

    I avoid bread/gluten and go crazy for the potatoes. I’m slim, fast metabolism, abuse coffee and caffeine drinks but learning this about the starches makes a few more things clear to me. Thanks Dr.!

    Most interesting informative (more you cook, process potato, glycemic index gets worse) as I love both and wondered about how bad each can be -- now I can only reduce considerbly the amount I want to eat (I love sweet potato but not yams) I love both but not instant potato.

    I love half cooked potatoes, in spanish it's papas sancochadas (parboiled) however it's cooked, baked, boiled, oven, air fried, in soups, potato and eggs etc, potato has to be sancochada not raw. I only like soft mushy potatoes if it's smashed potatoes
