For this recipe, I recommend using powdered ginger. Freshly shredded ginger may still work if you don't mind the texture and taste difference. Because fresh is less concentrated, you will have to to use more than 1/8 tsp (I would start with 1 tsp and taste test from there). Happy baking!
@@thesugarhideout Thank u! ill go get ground ginger from grocery store today! with sinnamon powder, i have cinnamon sugar, would you recommend putting extra amount of it and reduce a bit of icing sugar instead to balance amount of sugar for gingerbread cream? or would it be best i go buy cinnamon powder instead? Sugar granule is bigger in cinnamon sugar than icing sugar so will it make the texture of cream less smooth?

Cinnamon sugar could still work - however depending on the cinnamon concentration, you may end up with a very sweet cream even if you reduce/eliminate the icing sugar. If the cinnamon sugar contains granulated white sugar, it should dissolve just fine.
Hello! Yes you can use a 28cm tart pan. Multiply the recipe's ingredients by 1.96x since your pan is bigger (area of your 28cm tart pan divided by area of original recipe's 20cm tart pan). Please note baking time with the cheesecake filling may take a little longer. Happy baking!
