That "high note" that you were particularly impressed by, it is a type of vocal embellishment heard in the folk singing of some Asian ethnicities, and today some Chinese pop singers with strong vocal backgrounds also use it, partly as a way to show off said strong vocal background. I honestly don't know what it's called, it's kinda sorta like yodelling? is best I can describe it. You need to be in chest-voice to use it, and what's extremely impressive with Zhou Shen here, is that he was singing a pure, high note in full head-voice right before, and then immediately switched to full chest-voice while doing that embellishment. That head-voice to chest-voice switch alone, is extremely difficult to do without your voice breaking or just otherwise sounding terrible, and Zhou Shen is the only singer I've seen who's done this WHILE doing that particular vocal embellishment. Also we might thought he spent a lot of time practicing DaLaBengBa for the Singer2020 competitions, but in fact he had changed his plan to sing for this song at the last minute! As musician myself, I am sure he has perfect pitch and extremely gifted in music. He has amazing memory for tunes ,languages and has very wide voice range with near perfect vocal skills.
