Just found you. I realise this video is 6 yrs old, i saved in my library. Ive been making these for 40 years, my son is or was allergic to all foods. And i always cleaned out fridge into my rice paper rolls. Ive watched every video i could find your the only 1 who uses left overs.

Some of the world's great recipe's came from "Day Before Shopping Ingredients" where by people took out their old goods before they brought in the new stuff - because old school folks weren't wasteful their mind-set made them come up with new idea's about what 2 do with left overs so respected what they had n tried not 2 waste the food - its the kind of respect we must go back 2 instead of taking all our provision's for-granted! : (

Those are some really pretty egg rolls. Now I understand how to make the folds and keep the sides square. Then how to make that first half roll forward, stop, tuck them pesky little ears in that always sucks up some grease and dumps food into the grease, then finish the forward roll after wetting down the flap. I'm gonna make a huge batch of these shrimp egg rolls for me and my two special needs teenage boys tonight. I'm gonna make that sweet n' sour sauce to, except I'm going to add a spoonful of some Chinese chili garlic sauce to give it a little bite at the back side. ;-) Your the bee's knees young lady! Thanks for teaching this old dog a new trick or two! ;-)
