    My mom uses those large Ziploc bags to flour her chicken and other meats because those "Walmart" bags or any grocery store bags they will break. I'm making oxtails right now, but I smoke mine on the smoker first for 2 1/2 hours then braise them in a braising liquid [I make myself] in the oven for at least 3 more hours or until tender. I used cornstarch for my thickening agent instead of flour since I'm watching my carbs. Love your videos! You really explain every step and that is so important plus you also explain the WHY, too!

    Ms. Chris, thank you! I don't know what else to say but thank you. I am 51 and never learned to cook. I've been watching a cook that's close to where I live here in OH and one day came across one of your videos. To be honest, it was your lioks that got me before your cooking....you look like a younger version of my husband's grandmother. We list her last year and so when I saw you, I had to stop. But once I started watching your videos, I was hooked. I made this recipe once before and loved it. I tried to get my mom to try but she thinks, because of the name, that they are a cow's version of a chitterlings. We've never had chitterlings...(and don't plan on trying), but that's what she's relating the oxtails to and won't try them. Her loss! I'm making them tomorrow and can't wait. Thank you so much!

    Made this yesterday with four large oxtails (2 inches thick) as my first try at cooking them. Made your recipe in my enameled cast iron pot on the stove. Used tsps of the spices anyway, even though my quantity of oxtails was much smaller. Oooooeeeee! Delicious! Tender meat, wonderful gravy. Served just with white rice from my rice cooker. Thank you for this excellent recipe and the clear instructions you provide in your video!

    • @chrismcmillan575
      @chrismcmillan575 9 лет назад +3

      GizmoBee1702 One question, using a tsp of each seasoning for your amount of ox tails didn't make them to spicy? Serving them with rice was the perfect way to go. I am so happy you tried it and enjoyed it. Thank you for the feedback.

    • @17025601
      @17025601 9 лет назад +2

      Chris Mcmillan No - not too spicy, but then we like our food "smacky-mouth" and flavorful. Chris used tablespoons. Making it on the stove in a lidded cast iron pot worked for me: I could slow cook it and watch it. Tender meat and gravy; didn't add potatoes.

    you are really good at showing us how to make all your yummy dishes/recipes. since I cannot come to your house and be a taste tester, I will stay here in Oregon and follow your instructions. you explain everything so well, you make it all seem pretty easy. I do move around on RUclips for different reasons but I find I come back to you quite often, so thank you for the no fuss, no must cooking lessons! see you soon.

    I've done it with the flower for years and stopped thinking it was going to come out better and that's why I went back to doing it that way. Consider using an electric pressure cooker. Cut my time down to one hour and locked in more flavor. I was impressed. I didn't think they would even be something that I would do but after using one, I bought 2 more. Black eye peas done in 25 minutes, rice 10 minutes, pig feet 1 hour, you name it, flavor is locked in, there very safe now and they cut the cooking time by 2/3.
    Nonetheless, you are doing a fine job! You are up there with my oldest sister and under my mother but everyone is for that matter. My hopes are to open a soul food joint one day but for now, I hope to have a food truck, with my pressure cookers and sale just as much food as the people can eat.

    WOW!!! Thanks you sooo much for such a wonderful dish you shared!! I am soo happy that I was able to make this dish and even my fat picky nephew licked the bowel lol!! This was my first time make ox tail and gravy at the age of 47!! I had one issue with the dish and that was I put to much oil in the pan when I braised the ox tails, so the oil was floating on top of the dish. I still enjoyed it and I am trying to learn the smothered pork chops recipe. But once again thanks for sharing your family traditions.

    I enjoy your recipes Chris! I’ve never cooked oxtails, I always enjoyed them when a dear friend of mine cooked them. Unfortunately he passed away and I never requested the recipe. Ironically this is the same way I prepare my beef for my beef stew!!! I put a dusting of flour on it before searing it. I use the same seasonings, including the onion and garlic powder, the Worcestershire sauce and I always use Lipton onion soup mix because my mom always did... I grew up on that deliciousness!!! I do add Lawry’s season salt to most of my food recipes though! But now thanks to you I’ll try it with the oxtails!!!

    Hello Chris, I loved watching you cook those oxtails. I'm also a lover of the Lipton soup mixes. For medical reasons, I had to start eating less sodium. When I cook oxtails now I just add 2 coups of water to a soup mix, pour it over my oxtails and let it cook down. It comes out great.

    I'm going to try the oven for my next oxtail try, because even when the meat fell off of the bone it was stringy and I did not like that. This way seems like it may alleviate that problem. Thank you for sharing this new way. Not only are you using the oven I won't have to wait 8 hours to cook them.
