  • On today's episode, we explore this unique knife shape. The Kirisuke is a version of a standard chef knife/Gyuto. It comes in a variety of sizes as well as a single bevel and double bevel. It is used in the same way as a chef knife. The single bevel knife has to be sharpened in a unique way. It also takes some good technique to work with the single bevel knife. This is acquired over time. We give a demonstration of what can go wrong. They are very beautiful and listed below are the different makers of the ones you see in video. Don't confuse this knife with the bunka. Typically the bunka, comes in a double bevel and is around 190 mm down to about 150 mm. The Kirisuke also comes in a variety of steels as well as finishes.
