Hi Joycelyn. To be frank i have not tried on butter. But generally shortening has higher melting point compare than butter. Shortening also help to retain shape. Probably you might need to search for other alternatives. And yes you can freeze the dough and fry the next day.
Hi, this is something i'm still learning. For me, i will go for a 'good looking' yam. Look for firm, no cracks, no holes, no soft spots... When i see it, it's like "love at first sight" kind of thing! Hahahahah.... Talking about vege shortening. I have seen recipes using just wheat starch and oil. Add this 2 binders when mashing and mixing the yam dough. Freeze the yam so that it's more solid and easy to transfer to the wok later.
Hi! We have checked various recipes from others... most of them using wheat starch. Only a few recipes mixed with tapioca starch with the ratio of 2:1 (2 wheat 1 tapioca). Sorry we have not tried using potato or cornstarch on this yam basket! 😬
You are incorrectly using wrong name in the title and video with “Yam” that actually is “Taro” and you are cooking in “Taro” (芋)in this video. You named it “Yam” that is a kind of like sweet potato which is not you used for cooking in this video.
