If you are crocheting a flat project like a blanket, crocheting in just the front or back loop adds texture. If it is the brim of a beanie, when you do it flat in rows in just the back loop only, it will allow stretch. When you are making amagarumi like what is demonstrated here, using only the front loop on a decrease will help hide/blend the decrease in the project. The front loop only at the head makes a more defined bend. Sometimes, when only using the back loop, it leaves a loop available to be worked later. For the earmuffs it helps them lay flatter. Hope this helps.
