    After seeing MPW's version, Mary is a breath of fresh air...and a great option for those afraid to handle hot oil!
    I like the red and green as well - a nice risk.

    Well, Spanish tortilla is made with fried potatoes which then are mixed with eggs.
    Spaniards are divided between those who love adding onion to the omelette, and those who hate it (you know, we're so passional, also regarding dishes).
    I've never tried an omelette with red pepper or parsley. Mary Berry's "tortilla" looks quite good but it's far from a typical Spanish tortilla.

    There are two main versions of Spanish tortilla: either with or without onion. In any case the onion should be cut in such big slices, just cut it to bits so it can blend with the potato. Potato, egg, salt, olive oil and optionally onion, thats more than enough to make a fantastic one.

    This has little to do with a spanish tortilla (Tortilla de Patatas). Being from Spain, I can recommend you the most accurate traditional tortilla video you’ll see. They speak spanish, but the ingredients are so simple. He’s Alberto Chicote, a spanish top chef ruclips.net/video/5B9e-wflRaA/видео.html

    Well it is a unique version of the spanish tortilla. The traditional one, as she said is made only with onions, potatoes and egg and you made it by frying the potatoes and onions, then you add the mix with the eggs and cook it on the pan. Even in Spain there are some different versions of the tortilla, but all of them have the same base: potatoes, onions and eggs. For example, in my home (I'm from Tenerife, Canary Islands) we always add fresh parsley, like Mary did.

    When I tried this, the pan and onion burnt and the potatoes didn't cook properly, even with the lid on and at a low heat, can anyone help as to what goes wrong?

    • @jtj9609
      @jtj9609 5 лет назад +1

      spaniard here. firstly you want to use A LOT more oil than that, that's why you burnt yours (don´t worry, it wont burn so it can be reused), then i'll also use a lot more potatoe. the potatoe is the star, not the egg.
      i like to cut my potatoes into cubes but you do whatever you wantstart with the potatoes and oil with no heat and bring them together on high heat to a boil (in a bigger pan that the one you are going to use to make the ommelette), then reduce it to medium (even medium low) and add the onion and red pepper if you want (cut into small cube s too, big chunks of onion are no good) and ry both the potatoes and onions gently. you can add your salt now if you want. move them arround some times so the ones in the bottom don't burn. this will take you like 30-40 minutes
      in the end the potatoes should be a little (little) bit brown but not creispy at all, you dont want them crispy at all. now transfer the potatoes to a bowl with the beaten eggs (4-5-6... that's just you but for 4 people i wouldnt use more than 6 maybe). Then, ONE OF THE MOST IMPORTANT STEPS, let the potatoe and eggs mixture rest in the bowl for like 15-20 minutes.
      Finally, heat up a pan with a little bit of oil in it(maybe one of the "smaller" ones because of texture" 24cm 9") with medium-ow heat. when it is warm, pour in the mixture in. since it is in medium/low-low there is no rush. let the skin form and then put a plate bigger than the pan on top. press the plate against it and flip it. do this several times until it is done to your taste. i like it runny. it will take some time (much less than with the high heat this woman used) but you'll get a moist, juicy tortilla

    • @mvl6827
      @mvl6827 4 года назад

      greenkitty82 you have to stir a lot. And use a lot of oil. And start on high heat, than lower after5 min.

    • @billystokes3917

      Well she did say that a classic Spanish tortilla is made with eggs, potatoes and onion but not hers. She even said that she added the peppers for her twist on the classic recipe. And she added parsley to be even cheekier.
      Also, in my opinion, it doesn't matter what you put in a dish as long as you enjoy eating it.
      For you to get things right you need to learn how to spell first. It isn't "yo have to get informated" it's either "you have to be informed" or "you need to do your research".
      But that doesn't matter because either way, she explicitly said it is her version/twist on the recipe. That means she did it the way she wants to make it unique.
