Last year I tried making fermented fresh tomato paste and then fermented ketchup. I fermented the tomato juice too. It was good to drink and add to stews. I will certainly try cooking rice with it when I make an oven bake with lamb/mutton chops on savory rice.
It's just a suggestion, and you may have already heard it, but...if you'll simply cut the stem out and freeze your tomatoes first, you'll only have to run warm water over them and the skins slip right off! Bam! Skinned tomatoes ready to make into whatever you're canning, and you didn't heat up the kitchen with your oven! It's a game changer! Tomatoes were the first thing I canned over forty years ago. I believe they're the gateway drug into canning!😅 Happy preserving!!

Yes, we each do it so differently. It's great seeing how others chose and trying other methods. I started doing the freezing after my cousin told me about it. I use Roma tomatoes and I don't can, I freeze all the sauce. Really depends on storage and so many other things to consider. I did not have animals to get meat from except deer so I had plenty of room for sauce there and my cellar flooded sometimes so canning wasn't a great idea.
Your channel is very informational and educational and I love the way that you include your children and everything so that they can learn from their experiences and their mistakes and still carry on the tradition. I wish that I had that kind of upbringing, I was brought up on a outskirts of the town farm but there was little that my grandparents actually grew or harvested.

Love this family! Rebecca, you keep being you. Tomatoes are wonderful. I have been canning for about 45 years. Tomatoes is one of my favorite to can. Dehydrate those peels and then grind to use as a thickener when needed.
I freeze my tomatoes until I have a freezer full and when they thaw all the water drains out along with the peels. I also have a coring tool that works great! I also use my countertop roaster oven for cooking down to keep my stove free. I cook mine for several hours or it's really runny. I also save my peels for freeze drying. They make a great powder for seasoning. If you don't have a freeze dryer you can dehydrate them.
Take those skins, dehydrate them, blend them up....boom. put in soup, use them for sauce....use the entire tomato, get all the goodness from your hard work
I can't wait to put into action the things I've learned from you and your family and my grandparents, it'll be a while before I get to that point due to my circumstances, but I look forward to it and I'm so excited to continue learning from you until I get to my permanent roots.❤❤❤❤

Then I can them but first run them through a old Champion juicer with a tomato seed screen. I then have tomato sauce! I get rid of the seeds and the skin to lower the lectens. If you get tired of roasting to remove the skins you might try this. Blessings

Hello, it' Mamiejo from France, I have an easier method to suggest to make tomato sauce.... in a french way : I wash my tomatoes, cut them in 4 with their skin. I put them in a big pot and cook them so during some minutes. I stir from time to time. No need to cook long ! Rapidly, the juce is coming up to the surface. I plonge my strainer in the middle of the boiling tomatoe flesh. The juice is coming up immediately in my strainer. With a ladle I take it off as much as I can by pressing with the ladle in the middle of the strainer. And work is done with limited handling ! Then I take my manual vegetable mill to extract the flesh and turn the handle. It is so easy to do and no electricity to spend. My tomato sauce comes out underneath and it's ready to can : good thickness, no more skins, no more seeds... and It is so much rapidly prepared, especially when you have kilos and kilos of tomatoes to can ! Just try ! Bye !

It’s be amazing and helpful if you create a “start to finish” playlist where you show the whole process from seeds to harvest or calf’s to milk and butcher and eggs to hens and all the compost each step as it’s happening and compiled to one video and the end and start of a new cycle. Also if you could do day in the life of all your family and kids where they take the camera and show all their chores and schooling and activities themselves would be really cool. I have found an easy way to deal with tomatoes and Canning them. I get my tomatoes I wash them I cut them up into pieces and then I put them in a blender and I blend them to liquid. I just lick will file them I make sure that I liquid am them enough that the peelings are all gone they're just liquid. I put them in a Dutch oven Or you could use a crock pot to slow cook them down you can make a sauce or you can continue own to make paste. After that you can choose whether you wish to freeze them or can it. The video I watched was once you got it down into a very thick sauce you put it In a casserole dish and put it in the oven at about 275 and just slow cook it down to the thickness you want for paste. I added a tablespoon of Kosher salt. But I honestly found that I could do it in a Dutch oven if I just watched it. I put the heat up to below medium let it cook and start simmering and dehydrating itself. As the time goes on I slowly turn it down to a point where it is thick as I wish it. The paste as it cooks down naturally sweeten
I have started dehydrating my tomatoes instead of canning. It takes up less space and I can process into sauce when needed. They also are nice to throw in when I do can sauce, as they absorb extra water so I can spend less energy and time cooking them down.
I'm looking forward to watching you guys "perfect" the processes over the years once that new garden kitchen and the house are finished and the gardens are extended and made more efficient. Like if sauce is a big thing for you guys, growing determinate varieties will make a lot of sense since they will ripen around the same time, and can be more efficiently put away in that kitchen. Just with the tomatoes alone, there's a lot of room for improvement that will make it less stressful and more efficient with your time. That and it tasting better than store bought definitely make it worth it in the long haul :)

Last year I changed my whole tomato program. I just put them in the freezer in bags and when the season slows I work on them. The skin comes right off. I bring them to a boil, puree, and can. It has been so much easier. I have seen this on a few channels, I think one of the was Jill Winger
No judgment on your practices, I promise. Since you have those organic tomato skins.....they can be dried and blended into a powder that is a wonderful ingredient to use as a thickener for soup and stew. Put in a shaker, it can be used for a garnish. I do not know what the nutrition value is, but tomato powder is quite expensive when used for smoothies. Sunshine to all.
I just dip tomatoes into boiling water and slip the skins right off. Very fast, easy, you can do many pounds at once. Also, If you cook tomatoes down to about a quarter volume and freeze the concentrate in quart containers, you can just break off enough from the chunk for whatever you need and put the rest back in the freezer. Saves lots of freezer room.

Canned home made V-8 juice is amazing. Also, Rebecca I have 2 peach trees and I freeze just a few of them but the majority I dehydrate. They are amazing dehydrated. I believe I ended up with 10 gallons of dried peaches. All gone by spring.. You might want to try. But of coarse your freeze drier will work amazing once you finally get the use of that. Great content and love all the information you all share about your daily farm life.
I’d grab a 33 qt canner so you can do 9 quart at a time. Or just a second canner to speed things up. I like to do it outside on a propane burner to keep from heating up the house and it frees up the stove.
For transplanting, you may consider buying a stand and plant transplanter. It is a game changer in combination with the 72 cell Windstrip trays. Two people can plant much faster and no one has to bend over.
As soon as I find a house to move into, I'm going to grow tuns of Roma tomatoes and make my own sauce, paste, and puree. It all goes in my homemade spaghetti sauce. It's something I now have to but a can or 2 a week to be able to afford. Because I still have to but my Italian sausage, and pasta, and parmeasan cheese. It's complete robbery. I hatehow we can't afford to eat anymore. 😢❤

I make passage from our tomatoes, I boil tomatoes for 5 mins then put them in moule which removes skin and seeds. Then simmer sauce until right density for storage. Tastes so much better than store bought passage.
14:33 use NANO TAPE to repair that hole in the blue bucket and if you freeze some of the 🍅🍅🍅🍅juices, you can freeze dry it & grind it up, to use as a seasoning powder...for chili & tikka masala
Rebecca instead of squeezing the tomatoes by hand suggest you use a cone & paddle. Can be found on line or your local stores, is a cone shaped sieve with a wood bat.
Homegrown does taste better. For instance, I dislike peas and carrots together, but when visiting my cousin’s farm we had homegrown peas and carrots for dinner and it was delicious!

What brand canner do you like?
Don't take the skins off your roasted tomatoes. Use an emersion blender when cooking down. Saves so much time!
I don't like it well as without the skin but the skin can be turned into powder!

Plant basil by your tomatoes! I haven't had a hornworm since doing it. Last season they demolished my tomatoes and peppers.
I have lots of Basil at the base of my tomatoes but the hornworms are at the top of the hoophouse.

Rebecca instead of squeezing the tomatoes by hand suggest you use a cone & paddle. Can be found on line or your local stores, is a cone shaped sieve with a wood bat.
Any peach that has a crunch to it is a no go! 😆
Homegrown does taste better. For instance, I dislike peas and carrots together, but when visiting my cousin’s farm we had homegrown peas and carrots for dinner and it was delicious!
