Delicious Cake Mandazi Recipe Guide

  • This is my take of a different type of mandazi or donuts with a recipe that's simmilar to a cake recipe hence the name cake mandazi. I've used mandazi flour but you can replace it with self raising flour if not available.
    Cake Mandazi
    Ingredients:
    2 large eggs, room temperature
    140 grams white sugar
    390 grams mandazi flour
    3/4 teaspoon nutmeg/lemon zest(optional)
    3 tablespoons (40 grams) margarine, melted and cooled to lukewarm
    120 ml milk, room temperature
    Procedure:
    Mix the dry ingredients in a large bowl and make a well at the centre of the flour.
    Add the eggs, melted margarine and milk and whisk for about 1 minute.
    Pour the liquid at the centre of the bowl with flour and mix to form a dough.
    When done the dough will be soft and sticky so place it in the fridge for about 30 min to make the dough easier to work with.
    After cooling the dough, place it on a work surface dusted with flour and roll it to a thickness of 1/2 cm
    Using a round cutter cut the dough to round shapes and set aside.
    Remould the remaining dough and roll again to cut more pieces.
    Deep fry the mandazis until golden brown on both sides then set aside to cool.
    Enjoy your them plain or dust with icing sugar.

    Thank you chef,the mandazi turned out soft,crumbly and crunchy at the same time. I didn't use eggs. Definitely my new go-to recipe.

    Good job chef. Myself i add a pinch of yeast in my self raising flour it helps them puff more while cooking.😀

    Hi Chef Raphael, thank you for this recipe. Kindly asking for proportions of ingredients incase am not using self raising flour or even the flour you have used above. Do I need to add baking powder / soda / yeast? If so what measurements also what measurements for flour. Am not within East Africa to get the flour u used above.

      Add vanilla essence it will remove the smell

      I thought it was just me i'm an adult and the eggs just smell nasty nowadays..could it be what they feed the chicken that makes eggs smelly. Way back they were never like that especially in the village.

      for this recipe I haven't tried without eggs but you could skip them and add 50ml milk

      My rule when using all purpose flour, add 1tsp baking powder to 100g of flour

      It’s possible that it would not be in all outlets depending on where you live. Check another branch

      Probably because you use self rising flour so perharps baking powder is not necessary.

      Try invest in a kitchen weighing scale it helps a lot. Not all ingredients can be measured cups
